My daughter, Jazlyn, is anaphylactic to egg, dairy, peanuts, and tree nuts. When she was first diagnosed, I found it very difficult to find recipes and foods that didn't taste like "allergy" food. Over the last 15 years I have had a lot of fun developing and changing recipes so that they are safe for her. I love to share my recipes so that other families can realize how yummy "allergy" foods can taste. You don't have to sacrifice taste or your favorite foods, you just have to rethink how to make them. I made a promise to Jazzy that I would do my very best to find a way for her to eat any food she wants to try. So far I have been able to keep that promise. I hope your family enjoys these recipes as much as we do.

Egg Free, Dairy Free Potato and Vegetable Soup

This is one of our favorite soups ever. Full of vegetables and creamy, this soup is amazing! I added 1 pound of cooked ground sausage, but you can either leave it out or replace it with any meat you desire.





Potato and Vegetable Soup

6 cups broth
6-8 potatoes, diced
20 baby carrots, sliced into 1/4ths
1 tsp Italian Seasoning
1/2 tsp pepper
2 1/2 cups frozen vegetables desired (we used 2 cups mixed vegetables and 1/2 cup peas)
1 cup soy milk
1/2 cup flour

Bring the broth to a boil in a soup pot. Add the potatoes, carrots, Italian Seasoning, and pepper. Cook over medium heat, stirring occasionally, until tender. Stir in the frozen vegetables. In a separate bowl, whisk the soy milk and flour until smooth. Add the soy milk mixture. Cook over low heat, stirring occasionally, for 10 minutes or until thickened.
*  If desired, you can stir 1 lb of cooked ground sausage or any meat desired into the mixture with the vegetables.

Egg Free, Dairy Free, Nut Free Crock Pot Pineapple Barbecue Chicken

This chicken was so moist it just falls off of the bone and had a fantastic flavor. The girls loved the pineapple cooked this way. Next time I'd like to try this sauce with boneless skinless chicken breasts because the kids weren't thrilled with the bones and skin.



Crock Pot Pineapple Barbecue Chicken

2 1/2 -3 lbs  chicken drumsticks or boneless skinless chicken breasts - frozen or thawed
40 oz bottle safe barbecue sauce
16 oz pineapple chunks - drained - reserve juice

Place the chicken, barbecue sauce, and pineapple juice in the crock pot and stir to coat. Pour the pineapple chunks on top. Cover and cook on high for 2-3 hours or on low for 4-6 hours.
*  The sauce is wonderful served over hot cooked rice.
*  If you use the chicken breasts, you can shred the chicken and mix with the sauce.

Crock Pot Simple Chicken and Noodle Casserole

We loved the Crock Pot Chicken and Noodles, but I wanted an even easier version so I could just put everything in the crock pot and leave it until it is time to eat.




Crock Pot Simple Chicken and Noodles

1 can safe turkey gravy
1 can creamed corn
2 cans water
1 lb cooked and shredded or diced chicken or turkey
1 box noodles, any shape desired, uncooked

Combine all of the ingredients in a sprayed crock pot. Cover then cook on low for 3-4 hours or until the noodles are cooked.

Egg Free, Dairy Free Quick and Simple Chicken and Vegetables over Biscuits

This meal was very easy to make since I always keep cooked shredded chicken in the freezer ready to use (my favorite is our Crock Pot Shredded Chicken). The girls loved this meal served over the Flattened Drop Biscuits.




Quick and Simple Chicken and Vegetables

1 lb cooked and diced or shredded chicken or turkey
2 cans mixed vegetables
1 can turkey gravy

Combine all of the ingredients and then heat until warmed through. Serve over warm biscuits if desired.

Egg Free, Dairy Free Simple Chicken and Rice a Roni Bake

This meal is so fast to put together and bakes into a yummy casserole. The chicken is moist and flavorful and the rice is tender and perfect. Baking the casserole this way tastes so much better than just cooking the chicken and Rice a Roni separately. The bottom picture was made with cooked ground sausage and peas in place of the chicken and corn.


 
 

Simple Chicken and Rice a Roni Bake

2 boxes chicken Rice a Roni
4 cups water
1 can turkey gravy
1 can corn or peas
2 lbs boneless skinless chicken breasts

Combine the Rice a Roni, water, gravy, and corn in a sprayed 11x15 baking dish. Place the chicken on top of the mixture. Cover with foil then bake at 375 for 1 hour or until the chicken is cooked through.
*  If desired, the raw chicken can be replaced with 1 lb of cooked meat such as diced or shredded chicken, ground beef, ground sausage, sliced sausage, ham, etc. The rest of the recipe stays the same.

Crock Pot Shredded Chicken for Freezing

I always buy my meat in bulk when it is on sale. I cook it up then freeze it in 1 lb bags so that the meals are faster and easier to prepare. This is easiest way to cook a lot of chicken at once. The chicken is very moist, has a good flavor, and shreds very easily. For ideas to use this chicken in, click on the chicken tab on the right of the blog. A few of our favorites are Chicken CroquettesChicken and Dumplings, Chicken and Noodles in White Sauce, Chicken Rice Pie, and Chicken Rice Soup







Crock Pot Shredded Chicken for Freezing

Boneless skinless chicken breasts, fat cut off as much as possible
2 chicken bouillon cubes dissolved in 1 cup water

Place the chicken in the Crock Pot, making sure that the lid still fits securely. The chicken will rise slightly so make sure there is a little room between the chicken and the lid. Pour the bouillon over top. Cover then cook on low for 8-10 hours or on high for 4-5 hours or until the chicken is cooked through and shreds easily.
*  I used 9 pounds of chicken and it was perfect in 9 hours on low.
*  I used 4 1/2 pounds of chicken and it was perfect in 5 hours on high.
*  I measure a little over 1 cup of the chicken into each bag. I also like to spoon some of the broth into the bag before sealing it.
*  Feel free to use plain water if you want to cut down on the sodium.
*  Great for soups, casseroles, chicken croquettes, BBQ chicken sandwiches, chicken and dumpling, or anywhere you would use cooked diced or shredded chicken.

Egg Free, Dairy Free Simple Meat and Noodle Bake

This recipe is very simple because the noodles are not cooked before baking them. They will bake in the sauce and have a wonderful flavor. Mix and match different meats, vegetable, and pasta shapes for a variety of meals.


Simple Meat and Noodle Bake

1 lb cooked ground beef, cooked diced chicken, turkey, ham, or Polska Kielbasa
1 box noodles, any shape desired, uncooked
1 can creamed corn
1 can vegetables desired such as peas, corn, green beans, mixed vegetables
1 can gravy
1 1/2 cans soy milk, divided use

Combine all of the ingredients except for the 1/2 cup of soy milk. Pour into a sprayed 9x13 baking dish. Pour the remaining 1/2 can of soy milk over top but do not stir. Press down the mixture if needed to be covered with the milk. Use a little additional soy milk if needed. Cover tightly with foil
then bake at 450 for 45 minutes or until the noodles are tender.

Egg Free, Dairy Free Crock Pot Turkey and Rice

My girls love anything with rice. This recipe is simple and yummy.





Crock Pot Turkey and Rice

2 cans turkey gravy
3 cups chicken broth
3 cups instant rice
1 lb cooked and diced or shredded turkey or chicken
1 can mixed vegetables OR 1 cup frozen peas and 1 cup frozen corn

Combine all of the ingredients in the sprayed crockpot. Cover and cook on low for 3-4 hours.

Egg Free, Dairy Free Chicken Corn Cobbler

This Chicken Corn Cobbler is very delicious and hearty. We loved the chicken, potato, and corn filling topped with the fluffy biscuits.



Chicken Corn Cobbler

2 cups cooked diced or shredded chicken
1 can creamed corn
1 can corn
1 can diced potatoes
1 1/2 cups Bisquick baking mix
3/4 cup soy milk

Combine the chicken, creamed corn, corn, and potatoes in a sprayed 8x11 baking dish. In a separate bowl, combine the Bisquick and soy milk. Drop by spoonfuls onto the chicken mixture. Bake at 350 for 40 minutes or until the biscuits are golden and cooked through.

Egg Free, Dairy Free Chicken and Stuffing Muffins

These yummy "muffins" are so easy to prepare and my girls couldn't get enough of them.




Chicken and Stuffing Muffins

5 cups dry stuffing mix
2 cups chicken broth
2 cups diced or shredded cooked chicken

Combine all of the ingredients. Press firmly into sprayed muffin cups. Bake at 350 for 25 minutes or until golden. Cool for a few minutes before serving.
*  This made 16 muffins.

Egg Free, Dairy Free Chicken and Dumplings

This is a great hearty meal that my girls couldn't get enough of. They especially loved the fluffy dumplings. Leftovers reheat perfectly.



Quick and Simple Chicken and Dumplings

6 tbsp dairy free margarine
½ cup flour
1 tsp salt
1 tsp pepper
2 cups chicken broth
2 cups cooked diced or shredded chicken
2 cans mixed vegetables
2 cups Bisquick baking mix
1 cup soy milk

Melt the margarine in a large saucepan over medium heat. Whisk in the flour, salt and pepper. Add the broth then whisk until thoroughly combined and thickened. Stir in the chicken and vegetables then bring to a boil over low heat. Meanwhile, combine the Bisquick and soy milk in a separate bowl until a soft dough is formed. Drop the dumpling mixture by spoonfuls on top of the boiling chicken mixture. Cook, uncovered, for 10 minutes. Cover and cook an additional 20 minutes or until the dumplings are cooked through.

Egg Free, Dairy Free Krispy Chicken

The chicken turned out very moist and the crust is very good. This is a good alternative to Shake 'N Bake coating. Feel free to change the seasonings to suit your taste.


Krispy Chicken

1 1/2 cups crushed Rice Krispies
1/2 tsp Italian seasoning
1/4 tsp salt
1/4 tsp pepper
2 tbsp. dairy free margarine, melted
1 lb boneless, skinless chicken tenders or sliced breasts

Combine the Rice Krispies, Italian seasoning, salt and pepper in a Ziploc. In a separate bowl, place the melted margarine. Coat the chicken with the margarine then place it in the Ziploc bag. Shake to coat then place on a foil lined sprayed baking sheet. Pour any remaining margarine or cereal mix over top. Bake at 400 for 20-25 minutes or until cooked through.

Egg Free, Dairy Free Crock Pot Mexican Chicken

This is another great crock pot meal. 4 pounds of chicken makes a lot of this casserole. However, it does freeze really well. You can easily reduce the chicken to 2 pounds if you desire. The top picture was taken before I shredded the chicken. This works great if you don't want to bother shredding the chicken. You will notice that there is more liquid if you use it this way. The middle and bottom pictures are with the shredded chicken and served the next day. We liked it much better shredded, which also makes a great taco filling.





Crock Pot Mexican Chicken


2-4 lbs boneless skinless chicken breasts, cut into large chunks
24 oz jar salsa
15.5 oz can kidney, black or pinto beans
1 can corn
Combine all of the ingredients in the crock pot, pressing the chicken into the mixture as much as possible. Cover then cook on low for 6-8 hours or until the chicken is cooked through and tender. Shred the chicken then return it to the crock pot. Mix thoroughly then serve.
*  Great as a casserole or taco filling.
*  The meal freezes very well both ways.

Egg Free, Dairy Free Chicken and Rice Bake

I always keep cooked meats in the freezer, so this meal was ready for the oven in less than 5 minutes. My family loved it and it was easy, what more can I ask for?


Chicken and Rice Bake

2 cups (about 1 lb) cooked, diced chicken
2 cups chicken broth
1 can turkey gravy
1 can corn or vegetables desired
1 cup uncooked Minute rice

Thoroughly combine all of the ingredients in a 9x13 baking dish. Cover with foil then bake at 350 for 1 hour or until the rice is tender.
*  Since I am feeding a family of 5, if I'm not planning any other sides with this meal, I'm going to double all of the ingredients, except for the chicken, and bake in an 11x15 baking dish.

Egg Free, Dairy Free Vegetable Tomato Rice Soup

I love throwing ingredients together and seeing what happens. I started with crushed tomatoes and broth then just added a few ingredients I was in the mood for. The result is a healthy, satisfying and delicious soup. This soup would also be good if you leave out the crushed tomatoes and use additional broth.



Vegetable Tomato Rice Soup

28 oz can crushed tomatoes
16 oz frozen broccoli and cauliflower, cooked according to the package
4 cups chicken broth
2 cups uncooked rice, cooked
2 cups cooked diced chicken

Combine all of the ingredients in a soup pot. Simmer until heated through.
* This soups freezes great and reheats easily in the microwave.

Egg Free, Dairy Free Chicken and Noodles in White Sauce

My girls really loved this casserole. Jazlyn even wanted it again the next day for lunch and it reheated perfectly.



Chicken and Noodles in White Sauce

2 tbsp dairy-free margarine
1/3 cup flour
Salt and pepper to taste
2 cups chicken broth
1 can corn, peas, or any vegetables desired
2 cups cooked, diced chicken
1 cup soup crackers, crushed (I used Saltines), optional but very good
1 box noodles, any shape desired

In a soup pot, cook and drain the noodles according to the package. Meanwhile, melt the margarine in a medium saucepan over medium heat. Add the flour, pepper, and salt then whisk until completely combined. Add the chicken broth then whisk constantly until the mixture is thickened. Add the corn, chicken, and crackers to the cooked noodles. Add the white sauce then cook and stir until completely coated and heated through.

Egg Free, Dairy Free Meat and Biscuit Casserole

A hearty and yummy casserole made with refrigerated biscuits. You can see we love this casserole by the 3 pictures below. We made it with ground beef, ham and chicken.

 
 
 
Meat and Biscuit Casserole

2 tubes safe refrigerated biscuits
1 lb cooked meat such as ground beef, ground sausage, diced chicken or diced ham
1 can gravy
1 can peas, corn or mixed vegetables
1 cup soy milk or broth

Place the biscuits in a single layer in a sprayed 9x13 baking dish. In a separate bowl, combine the remaining ingredients. Pour the meat mixture evenly over the biscuits. Bake at 400 for 20-25 minutes or until the biscuits are golden.
* If desired, you can use only 1 tube of biscuits in an 8x8 baking dish.

Egg Free, Dairy Free Chicken or Pork Chop Breading

This breading is a great substitute for the store bought Shake 'N Bake coating. The top picture is chicken tenders and the bottom picture is pork chops. Both were very good hot and cold.



Chicken or Pork Chop Breading

Chicken or pork chops
Safe bread crumbs (I use this recipe to make my own)
Seasoning desired (I used seasoning salt, pepper, garlic powder, onion powder,
       Italian Seasoning and Old Bay)
Few tbsp oil, optional

Place the bread crumbs, seasonings and oil in a large Ziploc bag. Moisten the meat with some water then place it, a few at a time, into the bag. Shake until thoroughly coated. Place the meat onto a foil lined baking sheet. Bake at 400 until cooked though (my boneless meats took 20-30 minutes).

Chicken and Rice in White Sauce

My middle daughter came up with this all-in-one casserole when it was her turn to pick supper. She asked for chicken, peas and rice in a white sauce. I was impressed that my 8 year old knew that she wanted a white sauce. We were all happy at how wonderful the meal turned out.


Chicken and Rice in White Sauce

2 tbsp dairy-free margarine
3 tbsp flour
2 cups chicken broth
1 can peas, corn or any vegetables desired
2 cups cooked, diced chicken
1 cup soup crackers, crushed, optional
2 cups cooked rice

Melt the margarine in a large soup pot over medium heat. Add the flour then whisk until completely combined. Add the chicken broth then whisk constantly until the mixture thickens slightly. Add the peas, chicken and crackers then stir until thoroughly combined. Add the rice then cook and stir until completely coated and heated through.

Egg Free, Dairy Free Stovetop Chicken and Rice

My girls love rice and they loved this easy meal.


Stovetop Chicken and Rice

1 lb cooked and diced or shredded chicken
2 cups broth or water
1 1/2 cups uncooked Minute rice
1 can gravy
1 can corn or vegetables desired
Salt and pepper to taste

Combine all of the ingredients in a large saucepan. Cook and stir over medium-high heat until the mixture comes to a boil. Reduce the heat to low then simmer for 30 minutes or until the rice is tender and the liquid is absorbed.
