My daughter, Jazlyn, is anaphylactic to egg, dairy, peanuts, and tree nuts. When she was first diagnosed, I found it very difficult to find recipes and foods that didn't taste like "allergy" food. Over the last 15 years I have had a lot of fun developing and changing recipes so that they are safe for her. I love to share my recipes so that other families can realize how yummy "allergy" foods can taste. You don't have to sacrifice taste or your favorite foods, you just have to rethink how to make them. I made a promise to Jazzy that I would do my very best to find a way for her to eat any food she wants to try. So far I have been able to keep that promise. I hope your family enjoys these recipes as much as we do.

Egg Free, Dairy Free, Nut Free Oven Roasted Sausage and Potatoes

This is a simple meal that my family loves and requests quite often.




Oven Roasted Sausage and Potatoes

Smoked sausage or Polska Kielbasa, sliced thin
Potatoes, peeled and diced
Olive oil
Seasonings desired, I usually use salt, pepper, and Italian seasoning

Toss the potatoes and sausage with the oil and seasonings. Spread the mixture on a foil or parchment paper lined baking sheet. Bake at 450 for 45 minutes or until golden and tender.

Egg Free, Dairy Free Simple Meat and Noodle Bake

This recipe is very simple because the noodles are not cooked before baking them. They will bake in the sauce and have a wonderful flavor. Mix and match different meats, vegetable, and pasta shapes for a variety of meals.


Simple Meat and Noodle Bake

1 lb cooked ground beef, cooked diced chicken, turkey, ham, or Polska Kielbasa
1 box noodles, any shape desired, uncooked
1 can creamed corn
1 can vegetables desired such as peas, corn, green beans, mixed vegetables
1 can gravy
1 1/2 cans soy milk, divided use

Combine all of the ingredients except for the 1/2 cup of soy milk. Pour into a sprayed 9x13 baking dish. Pour the remaining 1/2 can of soy milk over top but do not stir. Press down the mixture if needed to be covered with the milk. Use a little additional soy milk if needed. Cover tightly with foil
then bake at 450 for 45 minutes or until the noodles are tender.

Egg Free, Dairy Free Creamy Sausage Potato Chowder

I served this Creamy Sausage Potato Chowder with biscuits. It was hearty and the flavors were perfect together. I sliced the sausage, but next time I'm going to dice it.



Creamy Sausage Potato Chowder

5 tbsp dairy free margarine
3 tbsp flour
1/4 tsp salt
1/4 tsp pepper
2 cups soy milk
1 package smoked sausage or Polska Keilbasa, sliced or diced
2 cans diced potatoes
1 can peas

Melt the margarine in a soup pot over medium high heat. Whisk in the flour, salt, and pepper. Add the soy milk then cook and whisk until smooth and thickened. Stir in the sausage, potatoes, and peas then cook until heated through.

Crock Pot Sausage and Tater Tots

Another fast and simple all-in-one crock pot meal. Everyone loved this new addition to our crock pot meals.



Crock Pot Sausage and Tater Tots

1 package smoked sausage or polska kielbasa, sliced then cut into quarters
30-40 oz package tater tots
2 cans pork gravy
1 can corn

Combine all of the ingredients in the crock pot. Cover then cook on low for 6-8 hours or on high for 3-4 hours.

Egg Free, Dairy Free Quick and Easy Creamy Sausage Casserole

I was really pressed for time one night so I came up with this meal that only took about 15 minutes. My family loved it so much they asked for it again a few days later. This will be added to the list of meals we make the most.



Quick and Easy Creamy Sausage Casserole

1 stick (8 tbsp. / 1/2 cup) dairy free margarine
1 cup flour
2 1/2 cups soy milk
1 lb smoked sausage or polska kielbasa, sliced then cut into quarters
2 cans diced potatoes
2 cans green beans

Melt the margarine in a large saucepan over medium heat. Whisk in the flour. Add the soy milk then cook and whisk until thickened. Add the sausage, potatoes and green beans. Cook and stir until heated through.

Egg Free, Dairy Free Crock Pot Saucy Sausages

I love crock pot recipes and my family loves sausage, so this recipe is perfect. The sausage is so tender and flavorful over hot cooked noodles. At Jazlyn's suggestion, I added 4 oz of chopped pepperoni to the recipe. After being slow cooked, the pepperoni flavor and spice infused itself perfectly into the sauce.


Crock Pot Saucy Sausage

2-3 lbs smoked sausage or polska kielbasa, cut into bite size pieces
2 cans (26 1/2 oz each) spaghetti sauce

Combine all of the ingredients in the crock pot. Cover then cook on low for 5-7 hours.
*  Wonderful served in rolls or over hot cooked noodles or rice.
*  If you would like to add some extra flavor and spice, you can add 4 oz of chopped pepperoni.
