Welcome!

My daughter, Jazlyn, is anaphylactic to egg, dairy, peanuts, and tree nuts. When she was first diagnosed, I found it very difficult to find recipes and foods that didn't taste like "allergy" food. Over the last 15 years I have had a lot of fun developing and changing recipes so that they are safe for her. I love to share my recipes so that other families can realize how yummy "allergy" foods can taste. You don't have to sacrifice taste or your favorite foods, you just have to rethink how to make them. I made a promise to Jazzy that I would do my very best to find a way for her to eat any food she wants to try. So far I have been able to keep that promise. I hope your family enjoys these recipes as much as we do.

Egg Free, Dairy Free, Nut Free Crock Pot Pineapple Barbecue Chicken

This chicken was so moist it just falls off of the bone and had a fantastic flavor. The girls loved the pineapple cooked this way. Next time I'd like to try this sauce with boneless skinless chicken breasts because the kids weren't thrilled with the bones and skin.

Crock Pot Pineapple Barbecue Chicken

2 1/2 -3 lbs  chicken drumsticks or boneless skinless chicken breasts - frozen or thawed
40 oz bottle safe barbecue sauce
16 oz pineapple chunks - drained - reserve juice

Place the chicken, barbecue sauce, and pineapple juice in the crock pot and stir to coat. Pour the pineapple chunks on top. Cover and cook on high for 2-3 hours or on low for 4-6 hours.
*  The sauce is wonderful served over hot cooked rice.
*  If you use the chicken breasts, you can shred the chicken and mix with the sauce.

I love cobbler and pineapple so I decided to combine both of them into a perfect dessert. The bottom is a moist cakey type of cobbler that is so yummy.

1 can (20 oz) crushed pineapple or any canned fruit desired, drained,
          reserving 2/3 cup syrup
1/2 cup sugar

Melt the margarine in a glass 9 x 2 round pan. In a separate bowl, combine the 2/3 cup of reserved syrup, sugar, soy milk and vanilla. Add the flour then stir until thoroughly combined. Pour the batter over the margarine then stir to combine slightly. Spoon the pineapple evenly over the batter. Bake at 350 for 45 minutes or until the dough is cooked through.

My mom has been making this meal since I was little. Now it is one of my girls' most requested meals when they are at their Grandma's house.

2 tsp salt
1/2 tsp pepper
1 can pineapple slices and 1 can pineapple tidbits, drained - reserving the juice
1 jar bread and butter pickles, drained - reserving the juice
2 tbsp cornstarch

combine the ground beef, salt and pepper then form into meatballs. Brown in a skillet until cooked through.
Drain the grease. In a separate bowl, combine the pineapple juice, pickle juice and cornstarch. Add this mixture to the meatballs along with the pineapple tidbits and pickles. Cook and stir until the juice mixture thickens and is clear. Place the pineapple slices on top, cover then cook until heated through, occasionally flipping over the pineapple slices. Serve over hot cooked rice.

Egg Free, Dairy Free, Nut Free Pineapple Marshmallow Sweet Potato Casserole

This is one of our favorite holiday side dishes. My favorite part is the brown sugar topping. The marshmallows add just the right amount of sweetness to the casserole. This picture does not do this casserole justice. If you like sweet potatoes, I highly recommend trying this dish.

Pineapple Marshmallow Sweet Potato Casserole

2 large cans yams (sweet potatoes)
2-3 cans (8 oz each) crushed pineapples, drained
1 1/2 cup miniature marshmallows
1/4 cup dairy free margarine, softened
1/4 tsp salt
2 tbsp dairy free margarine
1/2 cup brown sugar

Mash the yams in a 2 quart microwave safe oval baking dish. Add the pineapples, marshmallows, 1/4 cup margarine and salt then stir until thoroughly combined. In a separate bowl, melt the 2 tbsp margarine. Add the brown sugar then stir until combined. Sprinkle the brown sugar mixture evenly over the yam mixture. Cover the dish with a paper towel then microwave for 7-9 minutes or until heated through.

Egg Free, Dairy Free Pineapple Chicken

This mild pineapple flavored chicken was perfect served over hot cooked rice.

Pineapple Chicken

2 lbs boneless skinless chicken breasts
Flour
3/4 cup reserved pineapple juice (if needed, use enough water to make 3/4 cup)
3 tsp corn starch
3 tbsp honey
20 oz OR 10 oz can crushed pineapple, drained, reserve juice

Coat the chicken breasts with the flour. In a skillet over medium-high heat, brown the chicken on both sides then continue to heat the chicken until fully cooked. Remove the chicken from the skillet then cut into bite size pieces. In a small bowl, combine the pineapple juice, corn starch and honey until smooth. Add the juice mixture to the skillet. Stirring constantly, boil for 30 seconds or until thickened. Stir the pineapple and chicken into the sauce and heat through. Serve over hot cooked rice if desired.

Egg Free, Dairy Free, Nut Free Pineapple Snack Cake

I love pineapples and this snack cake is just perfect. I love simple recipes and I always have this cake in the pan and ready before my stove can preheat. This cake makes a great breakfast or anytime snack. I also like it warmed up and topped with some soy milk. I wrap individual portions of the cake in foil so the girls can just grab one when they want one. It also makes it a portable treat or breakfast.

Pineapple Snack Cake

2 cups flour
1/2 cup sugar
2 tsp baking soda
1/2 tsp salt
1 can (20 oz) crushed pineapple
2 tsp vanilla extract

Combine the flour, sugar, baking soda and salt. Add the undrained pineapple and vanilla and stir until well incorporated. Pour into a sprayed 9x13 baking pan. Bake at 350 for 30 minutes or until a toothpick inserted in the center comes out clean.
