Welcome!

My daughter, Jazlyn, is anaphylactic to egg, dairy, peanuts, and tree nuts. When she was first diagnosed, I found it very difficult to find recipes and foods that didn't taste like "allergy" food. Over the last 15 years I have had a lot of fun developing and changing recipes so that they are safe for her. I love to share my recipes so that other families can realize how yummy "allergy" foods can taste. You don't have to sacrifice taste or your favorite foods, you just have to rethink how to make them. I made a promise to Jazzy that I would do my very best to find a way for her to eat any food she wants to try. So far I have been able to keep that promise. I hope your family enjoys these recipes as much as we do.

Egg Free, Dairy Free Sausage Noodle Bake

This all-in-one casserole was fast and easy to prepare since the noodles aren't boiled first. I also keep cooked ground sausage, ground beef and diced chicken in my freezer so that I can save the time it takes to fry and cook the meats each time. I just thawed 2 lbs of the ground sausage then stirred in the flour.

Sausage Noodle Bake

1 lb cooked ground sausage or ground beef
3 tbsp flour
2 cans beef gravy
1 can peas or corn
1 box noodles, uncooked
4 cups water

Stir the ground sausage and flour together in a sprayed 11x15 baking dish. Add the gravy, peas, noodles and water. Mix until thoroughly combined. Cover with foil then bake at 350 for 45 minutes.

Egg Free, Dairy Free Crock Pot Saucy Sausages

I love crock pot recipes and my family loves sausage, so this recipe is perfect. The sausage is so tender and flavorful over hot cooked noodles. At Jazlyn's suggestion, I added 4 oz of chopped pepperoni to the recipe. After being slow cooked, the pepperoni flavor and spice infused itself perfectly into the sauce.

Crock Pot Saucy Sausage

2-3 lbs smoked sausage or polska kielbasa, cut into bite size pieces
2 cans (26 1/2 oz each) spaghetti sauce

Combine all of the ingredients in the crock pot. Cover then cook on low for 5-7 hours.
*  Wonderful served in rolls or over hot cooked noodles or rice.
*  If you would like to add some extra flavor and spice, you can add 4 oz of chopped pepperoni.

Egg Free, Dairy Free Rice with Sausage and Peas

One night when it was her turn to pick the meal, my youngest daughter, Maleah, told me she wanted her rice cooked in broth and that I should add ground sausage and peas. All of my girls couldn't get enough of this mixture. I added some soy sauce on mine, which made the meal taste like fried rice. My husband stirred some dairy free margarine, salt and pepper into his.

Rice with Sausage and Peas

2 cups broth
2 cups uncooked Minute rice
1-2 cups cooked bulk sausage
1 can peas

Place the broth and rice in a large microwave safe bowl. Microwave for 8 minutes or until the rice is tender and the broth is absorbed. Stir in the sausage and peas then microwave until heated through.

Egg Free, Dairy Free Fast and Easy Stromboli

We love stromboli, but I didn't want to make my own dough. I found a safe store bought pizza crust and used it for the dough. The stromboli turned out really good.

Fast and Easy Stromboli

Safe prepared pizza crust (I used Pillsbury Pizza Crust Classic)
Fillings desired such as cooked ground beef, cooked ground sausage, pepperoni, diced peppers,
diced onions, Italian seasoning, garlic powder, etc.
Pizza sauce, as needed for moisture in the stromboli and additional for dipping

Unroll the pizza dough onto a large, sprayed, foil lined baking sheet. Place the filling and sauce down the center of the dough, leaving a little room at each end for shaping. Bring up all 4 ends and pinch them to seal. Bake at 425 for 14-18 minutes or until golden brown and cooked through.
*  If desired, you can make several smaller strombolis and customize them for each person.

Egg Free, Dairy Free Fast and Easy Pizza

We love our Bisquick thick crust pizza, but this pizza was much easier to prepare because it is made with a premade pizza crust. The crust of this pizza was thin and crunchy. Next time I will have to make two pizzas because the girls couldn't get enough.

Fast and Easy Pizza

Safe prepared pizza crust (I used Pillsbury Pizza Crust Classic)
Pizza sauce, as needed for moisture (I used a little over 1 cup of sauce)
Toppings desired such as cooked ground beef, cooked ground sausage, pepperoni, diced onions,
diced peppers, diced tomatoes, cooked chopped bacon, diced ham, Italian seasoning, etc.

Unroll the pizza dough onto a large, sprayed baking sheet. Spread the sauce over the dough. Cover the sauce evenly with the toppings you desire. Bake at 425 for 13-17 minutes or until golden brown and cooked through.

Egg Free, Dairy Free Fried Potatoes and Sausage

This has always been one of my favorite meals growing up. My mom made this for our family meal this weekend, so the amounts listed are to feed 7 people.

Fried Potatoes and Sausage

1 stick dairy free margarine
4 lb bag potatoes, peeled and sliced thin OR 5 cans diced potatoes
Salt and pepper to taste
2 lb smoked sausage, sliced into bite sized pieces

Melt the margarine in a large deep frying pan. You can use 2 pans if you don't have one large enough to fit all of the ingredients. Once the margarine is melted, add the potatoes, salt and pepper. Cook over medium heat, stirring occasionally, for 45 minutes or until the potatoes are tender. Add the sliced sausage then cook, stirring occasionally and flipping the sausages, for 15 minutes or until heated through.

Egg Free, Dairy Free Creamy Sausage and Potato Bake

1 lb fully cooked smoked sausage or Polska Kielbasa, cubed (I used Hillshire Farms)
1 can pork gravy (I used Campbell's)

* You can also use cooked ground beef and beef gravy.
* I used my potato peeler to make the potato slices very thin.
