My daughter, Jazlyn, is anaphylactic to egg, dairy, peanuts, and tree nuts. When she was first diagnosed, I found it very difficult to find recipes and foods that didn't taste like "allergy" food. Over the last 15 years I have had a lot of fun developing and changing recipes so that they are safe for her. I love to share my recipes so that other families can realize how yummy "allergy" foods can taste. You don't have to sacrifice taste or your favorite foods, you just have to rethink how to make them. I made a promise to Jazzy that I would do my very best to find a way for her to eat any food she wants to try. So far I have been able to keep that promise. I hope your family enjoys these recipes as much as we do.

Egg Free, Dairy Free, Nut Free Crock Pot Simple Cinnamon Rolls

I had a can of biscuits in the fridge that was about to expire so I came up with a super simple way of making cinnamon rolls in the crock pot. They are light and fluffy with the bottom coated with caramelized sugar. They are very good and make the house smell wonderful.




Crock Pot Simple Cinnamon Rolls

1 can safe refrigerated pop biscuits
1/2 cup dairy free margarine
1/2 cup brown sugar
1 tsp cinnamon
1 tsp vanilla extract

Melt the margarine then stir in the vanilla. In a separate bowl, combine the brown sugar and cinnamon. Roll a biscuit in the margarine to coat completely. Roll to evenly coat in the brown sugar and cinnamon mixture. Place in the sprayed crock pot. Cover with a paper towel then place on the lid. Cover then cook on low for 2-3 hours.

Egg Free, Dairy Free Meat and Biscuit Casserole

A hearty and yummy casserole made with refrigerated biscuits. You can see we love this casserole by the 3 pictures below. We made it with ground beef, ham and chicken.

 
 
 
Meat and Biscuit Casserole

2 tubes safe refrigerated biscuits
1 lb cooked meat such as ground beef, ground sausage, diced chicken or diced ham
1 can gravy
1 can peas, corn or mixed vegetables
1 cup soy milk or broth

Place the biscuits in a single layer in a sprayed 9x13 baking dish. In a separate bowl, combine the remaining ingredients. Pour the meat mixture evenly over the biscuits. Bake at 400 for 20-25 minutes or until the biscuits are golden.
* If desired, you can use only 1 tube of biscuits in an 8x8 baking dish.

Egg Free, Dairy Free Personal Biscuit Pizzas

These little pizzas are a fun meal. The biscuit dough makes a yummy crust.




Personal Biscuit Pizzas

1 tube safe refrigerated biscuits
8 oz can pizza sauce or tomato sauce with desired seasonings
Toppings desired such as pepperoni, cooked ground beef, cooked ground sausage, diced bell peppers, 
          diced onions, sliced olives, diced tomatoes, etc.

Press each biscuit into a 4” circle. Place on a foil lined baking sheet. Spread the sauce over each biscuit then top as desired. Bake at 425 for 10-15 minutes or until the crust is golden.
* Instead of flattening out the biscuits, you can place them into the bottom of well sprayed muffin cups. Press the dough gently up the sides of the muffin cups. Spoon the pizza sauce into each biscuit. Top as desired. Bake at 350 for 15-20 minutes or until the crust is golden.

Egg Free, Dairy Free Simple Apple Dumplings

I saw apple dumplings at the grocery store the other day and have been craving them since. This is a simple but yummy version. When I made them I placed the orange juice and margarine on the bottom then the apple dumplings on top. The next time I'm going to pour them over top of the dumplings. Feel free to make them either way.



Simple Apple Dumplings

3 apples, peeled, cored and diced
2 tubes safe refrigerated biscuits
3/4 cup orange juice
3 tbsp dairy free margarine, melted
Cinnamon sugar as desired

Flatten out a biscuit then seal some of the diced apples inside. Place the dumpling, seam side down, in a sprayed 11x15 baking dish. Repeat with the remaining biscuits. Pour the orange juice over the dumplings then drizzle with the melted margarine. Sprinkle with the cinnamon sugar. Bake at 375 for 25-30 minutes or until golden brown.
* Great served warm topped with soy milk.
