My daughter, Jazlyn, is anaphylactic to egg, dairy, peanuts, and tree nuts. When she was first diagnosed, I found it very difficult to find recipes and foods that didn't taste like "allergy" food. Over the last 15 years I have had a lot of fun developing and changing recipes so that they are safe for her. I love to share my recipes so that other families can realize how yummy "allergy" foods can taste. You don't have to sacrifice taste or your favorite foods, you just have to rethink how to make them. I made a promise to Jazzy that I would do my very best to find a way for her to eat any food she wants to try. So far I have been able to keep that promise. Egg Free, Dairy Free, Nut Free Simple Banana Ice Cream

Jazlyn has been on a banana kick lately and when I asked her what ice cream she would like me to make for her cousin's birthday party, of course she said banana. I came up with this recipe and we were so pleased because it is so creamy and delicious. It's also a great way to use up leftover bananas. The 1st picture is soft serve right out of the ice cream maker and the 2nd picture is after being frozen for a day.


Simple Banana Ice Cream

2 cups soy milk
1/2 cup sugar
2 tsp vanilla extract
Pinch salt
3 ripe bananas, sliced

Puree all of the ingredients in the blender. Transfer to the ice cream maker and process according to the manufacturer's directions.
