My daughter, Jazlyn, is anaphylactic to egg, dairy, peanuts, and tree nuts. When she was first diagnosed, I found it very difficult to find recipes and foods that didn't taste like "allergy" food. Over the last 15 years I have had a lot of fun developing and changing recipes so that they are safe for her. I love to share my recipes so that other families can realize how yummy "allergy" foods can taste. You don't have to sacrifice taste or your favorite foods, you just have to rethink how to make them. I made a promise to Jazzy that I would do my very best to find a way for her to eat any food she wants to try. So far I have been able to keep that promise. I hope your family enjoys these recipes as much as we do.

Egg Free, Dairy Free, Nut Free Crock Pot Simple Creamy Ground Beef and Noodles

Another simple yummy crock pot meal. I love that this meal takes less than 5 minutes to throw into the crock pot because I keep browned portioned meat in the freezer.



Crock Pot Simple Creamy Ground Beef and Noodles

1 can safe beef gravy
1 can creamed corn
2 cans water
1 lb cooked ground beef, ground turkey or ground sausage
1 box noodles, any shape desired, uncooked

Combine all of the ingredients in a sprayed crock pot. Cover then cook on low for 3-4 hours or until the noodles are cooked.

Egg Free, Dairy Free Simple Meat and Noodle Bake

This recipe is very simple because the noodles are not cooked before baking them. They will bake in the sauce and have a wonderful flavor. Mix and match different meats, vegetable, and pasta shapes for a variety of meals.


Simple Meat and Noodle Bake

1 lb cooked ground beef, cooked diced chicken, turkey, ham, or Polska Kielbasa
1 box noodles, any shape desired, uncooked
1 can creamed corn
1 can vegetables desired such as peas, corn, green beans, mixed vegetables
1 can gravy
1 1/2 cans soy milk, divided use

Combine all of the ingredients except for the 1/2 cup of soy milk. Pour into a sprayed 9x13 baking dish. Pour the remaining 1/2 can of soy milk over top but do not stir. Press down the mixture if needed to be covered with the milk. Use a little additional soy milk if needed. Cover tightly with foil
then bake at 450 for 45 minutes or until the noodles are tender.

Egg Free, Dairy Free, Nut Free Crock Pot Shepherd's Pie

This shepherd's pie is very simple to prepare and turns out very good and satisfying.


Crock Pot Shepherd's Pie

1 lb ground beef
2 cans mixed vegetables
1 can creamed corn
1 can beef gravy
4 cups mashed potatoes (I used instant)

Combine the ground beef, mixed vegetables, creamed corn, and gravy. Pour the mixture into the sprayed crockpot. Spread the potatoes evenly over top. Cover then cook on low for 3-4 hours.

Egg Free, Dairy Free Sausage and Potato Skillet

This is a quick and simple to prepare all in one casserole that has a great flavor.
 
 
Sausage and Potato Skillet

1 package smoked sausage, diced, 1 lb cooked diced ham or 1 lb cooked ground beef
1 can corn or green beans
2 cans diced potatoes
1 can pork gravy
1 tsp pepper
1/4 tsp salt

Place all of the ingredients in a saucepan over medium heat. Cook and stir until heated through.

Crock Pot Hamburger Rice

One of our favorite casseroles is the Hamburger Rice Casserole. This crock pot version is just as good with the convenience of using the crock pot.


 
Crock Pot Hamburger Rice
 
1 lb cooked ground beef
2 cans beef gravy
3 cups water
2 cups uncooked Minute rice
1 can creamed corn, optional but very good
 
Combine all of the ingredients in the crock pot. Cover then cook on low for 4-6 hours or on high for 3 hours or until the rice is tender.

1 box cooked noodles, any shape desired
1 lb cooked ground beef
1 can beef gravy

Egg Free, Dairy Free Simple Tuna Noodle Casserole

My husband wasn't eating dinner with us tonight, so I decided to make the girls a meal that I loved as a kid. My husband doesn't like tuna or tomatoes, so this is a perfect dinner for when he is not home. The girls couldn't get enough and we have now made it several times for lunches. Is it a bad thing when your husband is pickier than your kids?


Simple Tuna Noodle Casserole

1 box elbow macaroni, cooked
2 cans (5 oz each) tuna, drained
1 can peas
1 can diced tomatoes
1 can turkey gravy
1 cup safe bread crumbs or crushed safe potato chips

Combine the macaroni, tuna, peas, tomatoes and gravy. Transfer the mixture to a sprayed 9x13 baking dish. Top with the bread crumbs. Bake at 350 for 20 minutes or until hot and bubbly.

Egg Free, Dairy Free Meat and Biscuit Casserole

A hearty and yummy casserole made with refrigerated biscuits. You can see we love this casserole by the 3 pictures below. We made it with ground beef, ham and chicken.

 
 
 
Meat and Biscuit Casserole

2 tubes safe refrigerated biscuits
1 lb cooked meat such as ground beef, ground sausage, diced chicken or diced ham
1 can gravy
1 can peas, corn or mixed vegetables
1 cup soy milk or broth

Place the biscuits in a single layer in a sprayed 9x13 baking dish. In a separate bowl, combine the remaining ingredients. Pour the meat mixture evenly over the biscuits. Bake at 400 for 20-25 minutes or until the biscuits are golden.
* If desired, you can use only 1 tube of biscuits in an 8x8 baking dish.

Egg Free, Dairy Free Creamy Ground Beef

This is not the prettiest meal, but my family really enjoyed this quick and easy to prepare meal. I'm always trying to figure out really fast meals. Since I keep cooked ground beef in 1 lb portions in the freezer, meals like this can be prepared very fast.


Creamy Ground Beef

1 1/2 lbs cooked ground beef
1 can gravy
1 can water
1 cup mashed potato flakes

Heat the ground beef, gravy and water. Add the potato flakes then simmer and stir for a few minutes until thickened. Serve over hot cooked rice, bread, biscuits or rolls.

Egg Free, Dairy Free Quick Sausage and Noodles

My family really enjoyed this casserole that my middle daughter, Tayana, came up with when it was her day to pick the meal.


Quick Sausage and Noodles

1 box noodles, any shape desired
1 lb fully cooked smoked sausage or polska kielbasa, sliced fairly thin
1 can peas
1 can gravy
Boil the noodles and sausage slices until the noodles are done. Add the peas and gravy then cook and stir until heated through and combined.

Egg Free, Dairy Free Crock Pot Beef Cubes with Gravy

When I bought some beef cubes at the store, I decided to try to make a crock pot version of our Roast and Noodles. The beef turned out incredibly tender and the gravy was perfect. I served it over "buttered" noodles (hot cooked noodles with safe margrine stirred in) and corn. Jazlyn took a few bites and said "this one's a keeper".



Crock Pot Beef Cubes with Gravy

1 - 2 lbs beef cubes
2 cans beef gravy
2 beef bouillon cubes dissolved in 1/4 cup hot water

Combine all of the ingredients in the crock pot. Cover then cook on low for at least 6-8 hours.
*  Serve over hot cooked noodles, rice or mashed potatoes.

Egg Free, Dairy Free Chicken Croquettes

I loved chicken croquettes when I was growing up. I came up with this recipe a few years ago so Jazlyn could have them too. However, this time I ground the chicken with the gravy. The result was a taste and texture that was exactly how I remembered them.


Chicken Croquettes

4 cups diced or shredded cooked chicken or turkey
1 can gravy (I used turkey gravy)
1/2 cup bread crumbs (I used this recipe for our homemade bread crumbs), plus extra for rolling
1/3 cup dairy free margarine

Place the chicken and gravy in a blender then blend until finely ground, adding a little extra gravy, soy milk or broth if needed. Combine the chicken and gravy mixture with the bread crumbs until thoroughly combined, using extra bread crumbs as needed for the mixture to hold together. Shape into croquettes then roll in additional bread crumbs to thoroughly coat. If the mixture is too difficult to shape, chill it in the fridge or freezer for a little. Melt the margarine in a large skillet. Add the croquettes then cook and turn until browned on all sides.
*  If desired, you can keep the chicken shredded or finely diced instead of grinding it in the blender.

Egg Free Dairy Free Simple Shepherd's Pie

My family loves Shepherd's Pie and this is such an easy and fast way of making it.




Simple Shepherd's Pie

1 lb cooked ground beef or any meat desired
1 can beef gravy (I use Campbells)
1 can mixed vegetables or any desired
3-4 cups prepared mashed potatoes (to make it fast, I use Betty Crocker Mashed Potato Buds)

Combine the ground beef, gravy and vegetables. Transfer the mixture into an 8x11 or 9x9 baking dish. Spread the mashed potatoes evenly over the top. Bake at 350 for 15-20 minutes or until heated through.

Egg Free, Dairy Free Quick and Easy Meat and Noodles

Another fast, simple, delicious, versatile and family friendly meal. The girls love this meal because they can pick the meat, vegetable and shape of noodle.


Quick and Easy Meat and Noodles

1 lb browned ground sausage, ground beef, diced chicken, diced ham, etc.
1 box noodles, any shape desired, cooked
1 can gravy or tomato soup
1 can peas, corn, green beans, etc.

In a large saucepan over low heat, cook and stir all of the ingredients until thoroughly combined and heated through.
* If desired, you can place all of the ingredients in a 9x13 baking dish then cover and bake at 350 for 20 minutes or until heated through.
* 1/2 cup soy milk can be added for extra creaminess.

Egg Free, Dairy Free Crock Pot Ground Beef and Vegetables

The girls couldn't get enough of this easy to prepare meal. I love crock pot meals and this one we will be making frequently.


Crock Pot Ground Beef and Vegetables

6 potatoes, peeled and sliced very thin
10 baby carrots, sliced
1 can peas
2 lbs ground beef, cooked
1 can beef gravy (I used Campbell's)
1 1/2 cans water

Layer the potatoes, carrots, peas and ground beef in the crock pot in the order given. Combine the gravy and water then pour over the other ingredients. Cover and cook on high for 4 hours.

Egg Free, Dairy Free Creamy Tater Tot Casserole

My family loved this fast and easy to throw together casserole. I didn't have enough tater tots, so I covered 1/2 of the casserole with tater tots and the other half with homemade bread crumbs. This casserole was very good with both toppings.


Creamy Tater Tot Casserole

1 lb browned ground beef, browned ground sausage, diced ham, diced cooked chicken, etc.
1 can gravy
1 can peas, corn, green beans, etc.
1 cup soy milk
16 oz tater tots, or enough for a single layer

Thoroughly combine the ground beef, gravy, peas and soy milk in a 9x13 baking dish. Place the tater tots in a single layer on top of the mixture. Cover and bake at 350 for 45-55 minutes or until heated through and the tater tots are done. If desired, you can remove the cover for the last 10 minutes of baking to brown the tater tots and make them crispy.
* 1 can of tomato soup or a small can of tomato sauce can be used in place of the gravy.
* 1 cup of broth can be used in place of the soy milk.
* Bread crumbs can be used in place of the tater tots.

Egg Free, Dairy Free Crock Pot Ham and Potatoes

I've been trying to come up with new recipes that use ham. This turned out to be a simple delicious crock pot meal.


Crock Pot Ham and Potatoes

6-8 potatoes, thinly sliced
1 lb fully-cooked ham, diced
1 can pork gravy (I used Campbell's)

Place the potatoes in the bottom of the crock pot. Layer the ham over top of the potatoes. Pour the gravy over all of the ingredients. Do not stir. Cover and cook for 6 hours on low.

Egg Free, Dairy Free Sausage Casserole

This was the first time I made this recipe for my family and they all loved it.


Sausage Casserole

1 1/2 lb sausage, casings removed and browned like ground beef
2 cans beef or pork gravy (I used Campbell's)
1 1/2 gravy cans water
1 can peas
1 1/2 cups uncooked rice

Place all of the ingredients in a 11x15 baking dish. Stir until thoroughly combined. Cover with foil and bake at 350 for 40-45 minutes or until the rice is tender.
*  Cooked ground beef can be substituted for the sausage.

Egg Free, Dairy Free Salisbury Steak

A wonderful meat and gravy meal. Perfect served over hot cooked noodles, rice or mashed potatoes.


Salisbury Steak

1 lb ground meat
1/2 cup bread crumbs
1/2 cup crushed soup crackers (I used Saltines)
1/2 cup soy milk
1 can (10 1/4 oz) beef gravy (I used Campbells)
4 tbsp ketchup
1 tsp pepper

Thoroughly combine the meat, crumbs, crackers and soy milk. Shape into patties and place in a greased 8x8 baking dish. In a small bowl, combine the gravy, ketchup and pepper. Spoon the gravy mixture evenly over the meat patties. Cover and bake at 350 for 1 hour or until cooked through.
*  If you want extra gravy, you can double the gravy mixture.
