Welcome!

My daughter, Jazlyn, is anaphylactic to egg, dairy, peanuts, and tree nuts. When she was first diagnosed, I found it very difficult to find recipes and foods that didn't taste like "allergy" food. Over the last 15 years I have had a lot of fun developing and changing recipes so that they are safe for her. I love to share my recipes so that other families can realize how yummy "allergy" foods can taste. You don't have to sacrifice taste or your favorite foods, you just have to rethink how to make them. I made a promise to Jazzy that I would do my very best to find a way for her to eat any food she wants to try. So far I have been able to keep that promise. I hope your family enjoys these recipes as much as we do.

Egg Free, Dairy Free, Nut Free Sloppy Joes

I love Sloppy Joes, but I wanted a healthier version that still had a lot of flavor. The girls and I loved it, especially over cooked brown rice, pasta, or mashed potatoes.

Sloppy Joes

1-2 lbs ground turkey or ground beef
1 diced pepper
1 diced onion
15.5 oz can tomato sauce
14.5 oz can diced tomatoes
1 tbsp garlic powder
1 tbsp onion powder
1 tsp pepper
1/2 tsp salt

Fry the meat, pepper, and onion in a skillet until done. Add the remaining ingredients then cook and stir until heated and thickened.
*  Freezes perfectly. I like to place a single serving of the frozen Sloppy Joes in a large microwave safe bowl with 1/2 cup brown rice and 3/4 cup water then microwave for 6 minutes or until the rice is done.

Egg Free, Dairy Free Simple Meat and Noodle Bake

This recipe is very simple because the noodles are not cooked before baking them. They will bake in the sauce and have a wonderful flavor. Mix and match different meats, vegetable, and pasta shapes for a variety of meals.

1 box noodles, any shape desired, uncooked
1 can creamed corn

1 can gravy
1 1/2 cans soy milk, divided use

Combine all of the ingredients except for the 1/2 cup of soy milk. Pour into a sprayed 9x13 baking dish. Pour the remaining 1/2 can of soy milk over top but do not stir. Press down the mixture if needed to be covered with the milk. Use a little additional soy milk if needed. Cover tightly with foil
then bake at 450 for 45 minutes or until the noodles are tender.

Egg Free, Dairy Free Simple Ground Beef and Noodle Bake

This casserole is very quick to prepare because the noodles are not cooked before baking. I also keep cooked ground beef proportioned in the freezer that I can just thaw and add. If you want your noodles more tender, you can use cooked noodles then just bake the casserole until bubbly and heated through.

2 cups soy milk or beef broth

Egg Free, Dairy Free Simple Tuna Noodle Casserole

My husband wasn't eating dinner with us tonight, so I decided to make the girls a meal that I loved as a kid. My husband doesn't like tuna or tomatoes, so this is a perfect dinner for when he is not home. The girls couldn't get enough and we have now made it several times for lunches. Is it a bad thing when your husband is pickier than your kids?

Simple Tuna Noodle Casserole

1 box elbow macaroni, cooked
2 cans (5 oz each) tuna, drained
1 can peas
1 can diced tomatoes
1 can turkey gravy
1 cup safe bread crumbs or crushed safe potato chips

Combine the macaroni, tuna, peas, tomatoes and gravy. Transfer the mixture to a sprayed 9x13 baking dish. Top with the bread crumbs. Bake at 350 for 20 minutes or until hot and bubbly.

In a soup pot, cook and drain the noodles according to the package. Meanwhile, melt the margarine in a medium saucepan over medium heat. Egg Free, Dairy Free Beefy Tomato Noodles

This is a quick and easy one pot noodle casserole. My girls kept asking for more. I left out the diced tomatoes this time because my husband doesn't like them. Next time I'm planning on stirring them into our individual portions.

1 lb cooked ground beef
1 box noodles, uncooked
4 cups water
8 oz can tomato sauce
3 beef bouillon cubes
1 can vegetables desired such as peas or corn

Egg Free, Dairy Free Sausage Noodle Bake

This all-in-one casserole was fast and easy to prepare since the noodles aren't boiled first. I also keep cooked ground sausage, ground beef and diced chicken in my freezer so that I can save the time it takes to fry and cook the meats each time. I just thawed 2 lbs of the ground sausage then stirred in the flour.

Sausage Noodle Bake

1 lb cooked ground sausage or ground beef
3 tbsp flour
2 cans beef gravy
1 can peas or corn
1 box noodles, uncooked
4 cups water

Stir the ground sausage and flour together in a sprayed 11x15 baking dish. Add the gravy, peas, noodles and water. Mix until thoroughly combined. Cover with foil then bake at 350 for 45 minutes.

Italian Pasta Salad

I made this Pasta Salad for a Church pot luck. It turned out very good. It wasn't creamy like the traditional pasta salad with mayonnaise, but we also didn't have to worry about it going bad from the heat.

Italian Pasta Salad

1 box elbow noodles, cooked and rinsed until cool
1-2 cups safe Italian salad dressing
Vegetables desired such as thawed frozen peas, shredded or diced carrots, sliced black olives,
diced cucumbers, halved cherry tomatoes, diced cucumbers, diced bell peppers, diced onions,
     chopped broccoli, chopped cauliflower, etc.
Diced pepperoni, chicken or ham, optional
1 can beans, such as kidneys, drained and rinsed, optional

Thoroughly combine all of the ingredients. Cover and place in the fridge for at least 3 hours, stirring occasionally. Serve with a slotted spoon. Store tightly covered in the fridge.

This meal is a different way to make spaghetti. The noodles cook in the sauce so they have a different texture and flavor than traditional spaghetti.

One Dish Spaghetti

1 lb ground beef or bulk sausage
3 1/2 cups water
26 oz can spaghetti sauce
1 box noodles, any shape desired

Brown the beef in a deep skillet. Add the water, spaghetti sauce and noodles then stir until well combined. Cover and bring to a boil over high heat. Reduce the heat to low then simmer, stirring occasionally, for 20 minutes or until the noodles are tender.

Egg Free, Dairy Free Lasagna

We had a potluck dinner at Church and my two youngest daughters really liked the lasagna. Tayana asked if I could make a lasagna that was safe for Jazlyn. I didn't want to just use just meat, sauce and noodles. I felt like something should take the place of the cheese. I decided to try and use prepared instant mashed potatoes and it worked. This lasagna was full of flavor and had a great texture. My girls couldn't get enough and my husband said he liked it better than the traditional lasagna. Another victory for the egg free, dairy free and nut free kiddo.

Lasagna

1 1/2 cans of spaghetti sauce (39 oz)
1 lb cooked ground beef
2 tbsp Italian seasoning
1 box lasagna noodles, cooked and drained

4 cups prepared mashed potatoes (I used Betty Crocker Potato Buds prepared with just beef broth)

Place a layer of the sauce in the bottom of a 9x13 baking dish. Combine the remaining sauce, ground beef and seasoning. Place a layer of 4 lasagna noodles over top of the sauce in the dish. Spread 1/2 of the mashed potatoes over the noodles then top with 4 more noodles. Spread 1/2 of the ground beef mixture over the noodles then top with 4 more noodles. Repeat the layers, ending with the ground beef mixture on top. Cover with foil then bake at 375 for 30 minutes. Uncover then bake 10 additional minutes. Let the Lasagna cool for 5-10 minutes before serving.
*  The Lasagna reheats perfectly.
