This fresh tomato soup is worth the small amount of extra work. It is very good with safe grilled cheese sandwiches, biscuits, or anything you desire.
Fresh Tomato Soup
6 cups chopped tomatoes (since they will be blended, they do not have to be small -
I cut cherry tomatoes in half)
3 cups chicken broth
3 tbsp dairy free margarine
3 tbsp flour
1 tsp salt
1 tsp sugar
1/2 tsp pepper
Place the tomatoes and broth in a soup pot over medium heat. Cook, stirring occasionally, for 20 minutes over a light boil. Use an immersion blender to blend until smooth. In a separate small saucepan, melt the margarine. Whisk in the flour. Add a little of the tomato mixture then whisk until smooth. Add the salt, sugar, and pepper then heat until thickened.
* If you don't have an immersion blender, you can allow the mixture to cool a little then blend in a regular blender.

I love to share my recipes so that other families can realize how yummy "allergy" foods can taste. You don't have to sacrifice taste or your favorite foods, you just have to rethink how to make them. I made a promise to Jazzy that I would do my very best to find a way for her to eat any food she wants to try. So far I have been able to keep that promise. Egg Free, Dairy Free Tomato Soup Meatloaf
This Tomato Soup Meatloaf had a nice flavor and held together perfectly. It also reheated great the next day. I made 4 smaller meatloaves instead of 1 big meatloaf. Either way, just make sure that the meatloaf if cooked through. I lost track of time and burnt the outside, but my family still loved the flavor.
Tomato Soup Meatloaf
4 lbs ground beef
1 can condensed tomato soup
3 cups fresh bread cubes
1 tbsp. Italian seasoning
2 tsp pepper
1 tsp salt
Combine all of the ingredients thoroughly. Form the mixture into one large meatloaf or four smaller meatloaves. Place on a sprayed foil lined baking sheet. Bake at 350 for 1 hour or until cooked through.

Crock Pot Tomato Hamburger Rice
I love our Crock Pot Hamburger Rice. This is a great creamy version made with tomato soup and tomato sauce in place of gravy. If my husband liked tomatoes, I would add a can of diced tomatoes.
Crock Pot Tomato Hamburger Rice
1-2 lbs cooked ground beef
2 cans condensed tomato soup
2 cups uncooked Minute rice
16 oz can tomato sauce
1 can diced tomatoes, optional
Thoroughly combine all of the ingredients in the crock pot. Cover then cook on low for 3-4 hours or until the rice is tender.

Crock Pot Tomato Pork Chops
I wanted to try something different with pork chops so I decided to throw them in the crock pot with some tomato soup. They turned out very tender with a wonderful taste.
Crock Pot Tomato Pork Chops
2 lbs thinly sliced boneless pork chops
1 can condensed tomato soup
1 soup can water
Salt and pepper to taste
Combine the tomato soup and water in the crock pot. Add the pork chops them press them down to cover them with the liquid. Cover and cook on high for 3-4 hours or on low for 6-8 hours.
* If desired, you can coat the pork chops in flour, salt and pepper before adding them to the crock pot.
* Wonderful served over hot cooked rice, noodles or mashed potatoes.

Egg Free, Dairy Free Crock Pot Sloppy Joes
Making Sloppy Joes in the crock pot infuses the meat with all of the wonderful flavors.
Crock Pot Sloppy Joes
2 lbs cooked ground beef
1 can tomato soup
8 oz can tomato sauce
1/2 cup ketchup
2 tbsp brown sugar
2 tsp mustard
1 tsp garlic salt
1 tsp pepper
Thoroughly combine all of the ingredients in the crock pot. Cover then cook on low for 4-8 hours depending how soft you want you meat to be.
* Wonderful served as a sandwich or over rice, noodles or mashed potatoes.

Egg Free Dairy Free Crock Pot Tomato Steak
I had some cubed and flank steak that's been in the freezer so I decided to come up with a new crock pot meal. The steak is so tender when it is done that it simply falls apart. It tasted like my mom's pot roast and was wonderful.
Crock Pot Steak
1/4 cup flour
1 tsp salt
1 tsp pepper
2 lb steak, cut into large pieces
2 tbsp dairy free margarine or oil
1 can tomato soup
1 can water
Combine the flour, salt and pepper in a shallow dish. Coat the steak completely in the flour mixture. Heat the margarine in a large skillet. Brown the coated steak in the margarine until browned on both sides. Combine the tomato soup and water in the crock pot. Stir in the steak. Cover and cook on low for 6-8 hours or on high for 3-4 hours.
* The steak will be so soft when it is done that it will fall apart when you remove it.
* Serve over hot cooked rice, noodles or mashed potatoes.

Egg Free, Dairy Free Quick and Easy Meat and Noodles
Another fast, simple, delicious, versatile and family friendly meal. The girls love this meal because they can pick the meat, vegetable and shape of noodle.
Quick and Easy Meat and Noodles
1 lb browned ground sausage, ground beef, diced chicken, diced ham, etc.
1 box noodles, any shape desired, cooked
1 can gravy or tomato soup
1 can peas, corn, green beans, etc.
In a large saucepan over low heat, cook and stir all of the ingredients until thoroughly combined and heated through.
* If desired, you can place all of the ingredients in a 9x13 baking dish then cover and bake at 350 for 20 minutes or until heated through.
* 1/2 cup soy milk can be added for extra creaminess.

Egg Free, Dairy Free Crock Pot Tomato, Beef and Potatoes
This is a wonderful, filling, all-in-one crock pot casserole.
Crock Pot Tomato, Beef and Potatoes
6 medium potatoes, peeled and thinly sliced
2 lbs ground beef, browned
1 can peas, optional
1 can condensed tomato soup
1/2 soup can water
Place 1/2 of the potatoes in the bottom of a sprayed crock pot. Layer 1/2 of the ground beef then 1/2 of the peas over top of the potatoes. Repeat the layers of potatoes, ground beef and peas. Pour the tomato soup and water over top and do not stir. Cover and cook on low for 4-6 hours or until the potatoes are very tender.
* 1 can of diced tomatoes would be a wonderful addition to this casserole, but my husband doesn't like tomatoes.

Egg Free, Dairy Free Beef and Rice Casserole
An easy to prepare all in one meal.
Beef and Rice Casserole
1 cup cooked ground beef
1 cup rice, uncooked
1 can condensed tomato soup (I use Campbells)
1 1/2 cups beef broth
1 can creamed corn
Combine all of the ingredients in a large saucepan. Bring the mixture to a boil, cover, reduce the heat to low then simmer for 30 minutes or until the rice is cooked and the liquids are mostly absorbed.
