My daughter, Jazlyn, is anaphylactic to egg, dairy, peanuts, and tree nuts. When she was first diagnosed, I found it very difficult to find recipes and foods that didn't taste like "allergy" food. Over the last 15 years I have had a lot of fun developing and changing recipes so that they are safe for her. I love to share my recipes so that other families can realize how yummy "allergy" foods can taste. You don't have to sacrifice taste or your favorite foods, you just have to rethink how to make them. I made a promise to Jazzy that I would do my very best to find a way for her to eat any food she wants to try. So far I have been able to keep that promise. I hope your family enjoys these recipes as much as we do.

Egg Free, Dairy Free Baked Diced Tomatoes

My wonderful brother gave us a huge bag of cherry tomatoes. We tried a bunch of new recipes with them, but this was by far our favorite. We made this recipe 5 times for our lunch in one week. We liked it best warm right from the oven. However, it is also pretty good chilled. I highly recommend trying this recipe if you like tomatoes.




Baked Diced Tomatoes

1/4 cup dairy free margarine
2 cups fresh diced tomatoes or cherry tomatoes cut in half
1 1/2 cups bread crumbs, divided use
2 tbsp sugar or to taste
1/8 tsp salt

Place the margarine in an 8x8 baking dish. Microwave until melted. Add the tomatoes, 1 cup of the bread crumbs, sugar, and salt then mix thoroughly. Cover evenly with the remaining 1/2 cup of bread crumbs. Bake at 325 for 20 minutes or until the crumbs are golden and the tomatoes are hot.

Egg Free, Dairy Free Simple Tuna Noodle Casserole

My husband wasn't eating dinner with us tonight, so I decided to make the girls a meal that I loved as a kid. My husband doesn't like tuna or tomatoes, so this is a perfect dinner for when he is not home. The girls couldn't get enough and we have now made it several times for lunches. Is it a bad thing when your husband is pickier than your kids?


Simple Tuna Noodle Casserole

1 box elbow macaroni, cooked
2 cans (5 oz each) tuna, drained
1 can peas
1 can diced tomatoes
1 can turkey gravy
1 cup safe bread crumbs or crushed safe potato chips

Combine the macaroni, tuna, peas, tomatoes and gravy. Transfer the mixture to a sprayed 9x13 baking dish. Top with the bread crumbs. Bake at 350 for 20 minutes or until hot and bubbly.

Egg Free, Dairy Free Tuna Balls

My husband doesn't like tuna so the girls and I like to make these for our lunch. Tayana doesn't eat tuna either, but she loves these tuna balls. We like them the to make them with the dairy free margarine.


Tuna Balls

3 cans (5 oz each) tuna, drained
1 cup safe bread crumbs (I used this recipe)
3 tbsp melted dairy free margarine, oil or safe salad dressing

Thoroughly combine all of the ingredients until the mixture can be rolled, adding more bread crumbs as needed. Roll the mixture into 1” balls. Place them on a well sprayed foil lined baking sheet. Bake at 350 for 20-25 minutes or until lightly browned and slightly crispy on the outside. If you have the time, flip the balls halfway through baking so they brown evenly. Serve warm or chilled.

Egg Free Dairy Free Simple Baked Onion Rings

The Baked Onion Rings we made were very good, but they were also a lot of work. This version just used melted margarine for the dip and were so much faster to prepare. They had a crispy coating with a wonderful flavor. The only difference was that the outside didn't stick quite as well. This will be my go-to recipe for onion rings.


Simple Baked Onion Rings

Onions, sliced into 1/4" - 3/4” thick rings then separated
Melted dairy free margarine or oil
1 cup safe bread crumbs, seasoned as desired

Place the margarine in one bowl and the bread crumbs in a separate bowl. Dip an onion ring into the melted margarine, allowing any extra to drip off, then thoroughly coat it with the bread crumbs. Place in a single layer on a well sprayed foil lined baking sheet. Repeat until all of the onion rings are coated. Lightly spray the rings with cooking spray then bake at 450 for 6 minutes. Flip the rings, spray them again then bake for 8 minutes or until golden brown and crispy. Best served hot.
* No matter what thickness my rings were, the onion rings were fantastic. The thinner ones got a little crisper, but the thicker ones had a stronger onion flavor.
* You can substitute the bread crumbs for finely crushed cornflakes seasoned with salt and pepper. The end result is thicker and chewier, but still good.
* You can also use cauliflower flowerets, broccoli flowerets and/or 1/4” thick zucchini slices.

Egg Free, Dairy Free Chicken Croquettes

I loved chicken croquettes when I was growing up. I came up with this recipe a few years ago so Jazlyn could have them too. However, this time I ground the chicken with the gravy. The result was a taste and texture that was exactly how I remembered them.


Chicken Croquettes

4 cups diced or shredded cooked chicken or turkey
1 can gravy (I used turkey gravy)
1/2 cup bread crumbs (I used this recipe for our homemade bread crumbs), plus extra for rolling
1/3 cup dairy free margarine

Place the chicken and gravy in a blender then blend until finely ground, adding a little extra gravy, soy milk or broth if needed. Combine the chicken and gravy mixture with the bread crumbs until thoroughly combined, using extra bread crumbs as needed for the mixture to hold together. Shape into croquettes then roll in additional bread crumbs to thoroughly coat. If the mixture is too difficult to shape, chill it in the fridge or freezer for a little. Melt the margarine in a large skillet. Add the croquettes then cook and turn until browned on all sides.
*  If desired, you can keep the chicken shredded or finely diced instead of grinding it in the blender.
