My daughter, Jazlyn, is anaphylactic to egg, dairy, peanuts, and tree nuts. When she was first diagnosed, I found it very difficult to find recipes and foods that didn't taste like "allergy" food. Over the last 15 years I have had a lot of fun developing and changing recipes so that they are safe for her. I love to share my recipes so that other families can realize how yummy "allergy" foods can taste. You don't have to sacrifice taste or your favorite foods, you just have to rethink how to make them. I made a promise to Jazzy that I would do my very best to find a way for her to eat any food she wants to try. So far I have been able to keep that promise. I hope your family enjoys these recipes as much as we do.

Egg Free, Dairy Free Potato Corn Chowder

This Potato Corn Chowder is very good, especially on a chilly night with Drop Biscuits. We added diced ham into the chowder and it was wonderful.




Potato Corn Chowder

5 large potatoes, peeled and cubed
16 oz bag frozen corn
1 lb cooked diced ham, chicken, turkey, ground sausage, ground beef, etc. - optional
4 cups broth, divided use
1/2 tsp salt
1/2 tsp pepper
1/4 cup flour
1 cup soy milk

In a soup pot over high heat, combine the potatoes, corn, meat, 3 1/2 cups broth, salt, and pepper. Cook and stir until the mixture comes to a boil. Cover, reduce the heat to low and simmer for 15 minutes or until the potatoes are tender. In a separate bowl, combine the remaining 1/2 cup broth and flour. Add to the potato mixture then cook and stir until it is thickened. Add the soy milk then cook, stirring occasionally, until hot but not boiling.
*  2 cups of soy milk can be used if you want your chowder thinner.

Crock Pot Simple Chicken and Noodle Casserole

We loved the Crock Pot Chicken and Noodles, but I wanted an even easier version so I could just put everything in the crock pot and leave it until it is time to eat.




Crock Pot Simple Chicken and Noodles

1 can safe turkey gravy
1 can creamed corn
2 cans water
1 lb cooked and shredded or diced chicken or turkey
1 box noodles, any shape desired, uncooked

Combine all of the ingredients in a sprayed crock pot. Cover then cook on low for 3-4 hours or until the noodles are cooked.

Egg Free, Dairy Free Crock Pot Potato Corn Chowder

I love using the crock pot and this chowder turned out really good. I made some Drop Biscuits to go with it.  Perfect for an easy winter meal.




Crock Pot Potato Corn Chowder

7-8 cups (6 large potatoes), peeled and diced potatoes
19 oz package frozen corn
1/4 cup flour
Salt, pepper, garlic powder, and onion powder to taste
6 cups chicken broth
1/2 - 1 lb cooked diced chicken, ham, sausage, etc. can be added to the chowder with the potatoes and corn.

Combine the potatoes, corn, flour, and seasonings in the sprayed crock pot. Stir in the broth. Cover then cook on low 7-8 hours or on high for 3-4 hours.

Egg Free, Dairy Free, Nut Free Crock Pot Shepherd's Pie

This shepherd's pie is very simple to prepare and turns out very good and satisfying.


Crock Pot Shepherd's Pie

1 lb ground beef
2 cans mixed vegetables
1 can creamed corn
1 can beef gravy
4 cups mashed potatoes (I used instant)

Combine the ground beef, mixed vegetables, creamed corn, and gravy. Pour the mixture into the sprayed crockpot. Spread the potatoes evenly over top. Cover then cook on low for 3-4 hours.

Egg Free, Dairy Free Chicken Corn Cobbler

This Chicken Corn Cobbler is very delicious and hearty. We loved the chicken, potato, and corn filling topped with the fluffy biscuits.



Chicken Corn Cobbler

2 cups cooked diced or shredded chicken
1 can creamed corn
1 can corn
1 can diced potatoes
1 1/2 cups Bisquick baking mix
3/4 cup soy milk

Combine the chicken, creamed corn, corn, and potatoes in a sprayed 8x11 baking dish. In a separate bowl, combine the Bisquick and soy milk. Drop by spoonfuls onto the chicken mixture. Bake at 350 for 40 minutes or until the biscuits are golden and cooked through.

Egg Free, Dairy Free Sausage and Potato Skillet

This is a quick and simple to prepare all in one casserole that has a great flavor.
 
 
Sausage and Potato Skillet

1 package smoked sausage, diced, 1 lb cooked diced ham or 1 lb cooked ground beef
1 can corn or green beans
2 cans diced potatoes
1 can pork gravy
1 tsp pepper
1/4 tsp salt

Place all of the ingredients in a saucepan over medium heat. Cook and stir until heated through.

Egg Free, Dairy Free Mexican Macaroni Bake

The girls and I love this casserole. My husband doesn't like salsa, so we make it for lunch then freeze the leftovers.



Mexican Macaroni Bake

1 box elbow macaroni, cooked
1 lb cooked ground beef
15.5 oz jar salsa
15.5 oz can dark red kidney beans
15.25 oz can corn
8 oz can tomato sauce

Thoroughly combine all of the ingredients. Transfer to a sprayed 11x15 baking dish. Cover with foil then bake at 350 for 25-30 minutes.
*  To save time, heat all of the ingredients in the noodle pot and heat through.
*  To make this vegan, remove the ground beef. An additional can of kidney beans can be added.

Crock Pot Sausage and Tater Tots

Another fast and simple all-in-one crock pot meal. Everyone loved this new addition to our crock pot meals.



Crock Pot Sausage and Tater Tots

1 package smoked sausage or polska kielbasa, sliced then cut into quarters
30-40 oz package tater tots
2 cans pork gravy
1 can corn

Combine all of the ingredients in the crock pot. Cover then cook on low for 6-8 hours or on high for 3-4 hours.

Egg Free, Dairy Free Crock Pot Mexican Chicken

This is another great crock pot meal. 4 pounds of chicken makes a lot of this casserole. However, it does freeze really well. You can easily reduce the chicken to 2 pounds if you desire. The top picture was taken before I shredded the chicken. This works great if you don't want to bother shredding the chicken. You will notice that there is more liquid if you use it this way. The middle and bottom pictures are with the shredded chicken and served the next day. We liked it much better shredded, which also makes a great taco filling.





Crock Pot Mexican Chicken


2-4 lbs boneless skinless chicken breasts, cut into large chunks
24 oz jar salsa
15.5 oz can kidney, black or pinto beans
1 can corn
Combine all of the ingredients in the crock pot, pressing the chicken into the mixture as much as possible. Cover then cook on low for 6-8 hours or until the chicken is cooked through and tender. Shred the chicken then return it to the crock pot. Mix thoroughly then serve.
*  Great as a casserole or taco filling.
*  The meal freezes very well both ways.

Egg Free, Dairy Free Chicken and Noodles in White Sauce

My girls really loved this casserole. Jazlyn even wanted it again the next day for lunch and it reheated perfectly.



Chicken and Noodles in White Sauce

2 tbsp dairy-free margarine
1/3 cup flour
Salt and pepper to taste
2 cups chicken broth
1 can corn, peas, or any vegetables desired
2 cups cooked, diced chicken
1 cup soup crackers, crushed (I used Saltines), optional but very good
1 box noodles, any shape desired

In a soup pot, cook and drain the noodles according to the package. Meanwhile, melt the margarine in a medium saucepan over medium heat. Add the flour, pepper, and salt then whisk until completely combined. Add the chicken broth then whisk constantly until the mixture is thickened. Add the corn, chicken, and crackers to the cooked noodles. Add the white sauce then cook and stir until completely coated and heated through.

Egg Free, Dairy Free Stovetop Chicken and Rice

My girls love rice and they loved this easy meal.


Stovetop Chicken and Rice

1 lb cooked and diced or shredded chicken
2 cups broth or water
1 1/2 cups uncooked Minute rice
1 can gravy
1 can corn or vegetables desired
Salt and pepper to taste

Combine all of the ingredients in a large saucepan. Cook and stir over medium-high heat until the mixture comes to a boil. Reduce the heat to low then simmer for 30 minutes or until the rice is tender and the liquid is absorbed.

Egg Free, Dairy Free Easy Corn Stuffing

This is a very quick and simple side dish and a unique way to serve corn.
Easy Corn Stuffing

Place 2 cans of undrained canned corn in an 8x8 baking dish. Add enough roughly crushed Saltines (or use the mini Saltines) to soak up most of the juice from the corn. Bake at 350 for 20 minutes or until set and heated through.

Egg Free, Dairy Free Meat and Noodle Bake

This casserole is creamy and hearty. We just had my parents over for dinner and the girls wanted to serve this casserole. I made 1 batch with chicken and peas and another batch with ground beef and corn. The leftovers reheated perfectly.




Meat and Noodle Bake

1 box cooked noodles, any shape desired
2 cups (1 lb) cooked diced chicken, ground beef, ground sausage,
         diced ham, etc.
1 can creamed corn
1 can peas, corn, etc.
1/2 cup dairy free margarine
1/3 cup flour
2 cups chicken or beef broth
1 cup soy milk
Salt and pepper to taste

Place the noodles, meat, creamed corn and vegetables in a 9x13 baking dish. In the empty noodle pot, melt the margarine. Add the flour then stir until smooth. Add the broth, soy milk, salt and pepper. Cook and stir until slightly thickened. Pour the sauce mixture over the noodle mixture then stir until thoroughly combined. Bake, uncovered, at 350 for 45 minutes.

Egg Free, Dairy Free Crock Pot Ham, Corn and Potato Soup

The broth to this soup is perfectly infused with the ham flavor. I had extra broth, so the next day I cooked some Minute rice in it.


Crock Pot Ham, Corn and Potato Soup

5-7 cups broth, depending how thin you want the soup and if you want leftover broth
1 lb cooked diced ham
2 cans diced potatoes
1 can creamed corn
1 can corn

Combine all of the ingredients in the crock pot. Cover and cook on low for 5-7 hours.
*  If desired, you can bring all of the ingredients to a boil on the stove then simmer until ready to serve.

Egg Free, Dairy Free Quick and Easy Meat and Noodles

Another fast, simple, delicious, versatile and family friendly meal. The girls love this meal because they can pick the meat, vegetable and shape of noodle.


Quick and Easy Meat and Noodles

1 lb browned ground sausage, ground beef, diced chicken, diced ham, etc.
1 box noodles, any shape desired, cooked
1 can gravy or tomato soup
1 can peas, corn, green beans, etc.

In a large saucepan over low heat, cook and stir all of the ingredients until thoroughly combined and heated through.
* If desired, you can place all of the ingredients in a 9x13 baking dish then cover and bake at 350 for 20 minutes or until heated through.
* 1/2 cup soy milk can be added for extra creaminess.

Egg Free, Dairy Free Creamy Potatoes and Ham

The sauce is very creamy and this casserole is a great use for leftover ham. My whole family loved this meal and is already asking for it again.


Creamy Potatoes and Ham

2 cans creamed corn
2 cans potatoes, sliced or diced
2-4 cups cubed cooked ham
6 tbsp dairy free margarine
6 tbsp flour
Salt and pepper to taste
3 cups soy milk

Combine the creamed corn, potatoes and ham in sprayed 9x13 baking dish. Melt the margarine in a saucepan. Whisk in the flour, salt and pepper. Add the soy milk and cook, whisking constantly, until the mixture thickens. Pour the sauce over the ham mixture then mix thoroughly. Bake at 350 for 20-30 minutes or until heated through.

Egg Free, Dairy Free Sweet Corn Cake

This Corn Cake is a great substitution for corn bread or just served as a side.




Sweet Corn Cake

8 1/2 oz box of safe corn bread mix
1/4 cup dairy free margarine, melted
1/4 cup water
15 oz can creamed corn
1-3 tbsp sugar, or to taste, optional

Combine the corn bread mix and melted margarine. Add the water, creamed corn and sugar then mix until thoroughly combined. Pour the mixture into a sprayed 9x5 loaf pan. Bake uncovered at 350 for 40-45 minutes or until the liquid as has been absorbed. Use an ice cream scoop or spoon to serve.

Egg Free, Dairy Free Chicken Corn Rice Soup

This fast and easy to prepare soup is a nice alternative to our favorite Chicken Corn Noodle Soup.


Chicken Corn Rice Soup

10 cups chicken broth
3 cups instant white rice, uncooked
1 pound boneless, skinless chicken breasts, cooked and diced
1 can whole kernel corn
1 can creamed corn

Over medium heat, bring the broth to a boil in a large pot. Add the rice then cook, stirring occasionally, until the rice is soft. Reduce the heat to low. Add the chicken, corn and creamed corn then cook, stirring occasionally, until heated through. The longer this soup simmers, the better the taste becomes.

Egg Free, Dairy Free Chicken Stuffing

Jazlyn and I love stuffing. This is a very quick recipe to make stuffing into a meal.


Chicken Stuffing

1 cup cooked diced chicken
1 3/4 cups water
3 tbsp dairy free margarine
1 can creamed corn
3 cups safe uncooked stuffing mix

In a medium saucepan, bring the chicken, water, margarine and corn to a boil. Add the stuffing and stir to completely combine. Remove the saucepan from the heat and cover. Allow to set for 5 minutes before stirring and serving.
