Welcome!

My daughter, Jazlyn, is anaphylactic to egg, dairy, peanuts, and tree nuts. When she was first diagnosed, I found it very difficult to find recipes and foods that didn't taste like "allergy" food. Over the last 15 years I have had a lot of fun developing and changing recipes so that they are safe for her. I love to share my recipes so that other families can realize how yummy "allergy" foods can taste. You don't have to sacrifice taste or your favorite foods, you just have to rethink how to make them. I made a promise to Jazzy that I would do my very best to find a way for her to eat any food she wants to try. So far I have been able to keep that promise. I hope your family enjoys these recipes as much as we do.

Egg Free, Dairy Free Veggie Rice

This is a very simple side dish that doesn't take much more time than just making rice. Adjust the vegetables to suit your family's taste. This was perfect for us. You could also turn this side dish into a fast and simple meal by adding any cooked meat you like such as ground beef, shredded chicken, or diced ham.

Veggie Rice

2 cups Minute rice
2 cups broth
5 baby carrots, shredded or diced small
1/2 cup frozen peas
2 tbsp dairy free margarine, optional

Microwave the rice, broth, and carrots for 8 minutes or until the rice is tender. Stir in the peas and margarine until the peas are thawed.
* If you want the peas cooked more, microwave them with the other ingredients. We liked the texture of the peas just thawed and heated from the hot rice.
* If desired, this side dish can be turned into a main dish by adding any cooked meat such as ground beef, shredded chicken, or diced ham.

Egg Free, Dairy Free Simple Meat and Noodle Bake

This recipe is very simple because the noodles are not cooked before baking them. They will bake in the sauce and have a wonderful flavor. Mix and match different meats, vegetable, and pasta shapes for a variety of meals.

Simple Meat and Noodle Bake

1 lb cooked ground beef, cooked diced chicken, turkey, ham, or Polska Kielbasa
1 box noodles, any shape desired, uncooked
1 can creamed corn
1 can vegetables desired such as peas, corn, green beans, mixed vegetables
1 can gravy
1 1/2 cans soy milk, divided use

Combine all of the ingredients except for the 1/2 cup of soy milk. Pour into a sprayed 9x13 baking dish. Pour the remaining 1/2 can of soy milk over top but do not stir. Press down the mixture if needed to be covered with the milk. Use a little additional soy milk if needed. Cover tightly with foil
then bake at 450 for 45 minutes or until the noodles are tender.

Egg Free, Dairy Free Tortilla Casserole

My girls love tortilla shells used in wraps, as the dough for tortilla shell pizzas, etc. We decided it would be fun to tear them up and put them in a casserole. Once baked, they turn soft and almost reminded me of a dumpling. This is also a quick to make and bake casserole so we are adding it to our list of favorite suppers.

Tortilla Casserole

5-6 tortilla shells (6” each), torn into small pieces
2 lbs cooked ground beef, ground sausage, diced chicken, etc.
2 cans gravy
1 can peas or corn

Thoroughly combine all of the ingredients in a 9x11 baking dish. Bake at 350 for 30 minutes or until heated through.

One night when it was her turn to pick the meal, my youngest daughter, Maleah, told me she wanted her rice cooked in broth and that I should add ground sausage and peas. 1-2 cups cooked bulk sausage
1 can peas

Place the broth and rice in a large microwave safe bowl. Microwave for 8 minutes or until the rice is tender and the broth is absorbed. Stir in the sausage and peas then microwave until heated through.

Egg Free, Dairy Free Beef and Peas with Potato Biscuits

My middle daughter, Tayana, loves dumplings and this time I wanted to try something a little different. The result is a simple to put together meal with really yummy biscuits. The potato biscuits were the highlight of the meal for the girls. The top picture shows the biscuits rolled into a ball and flattened slightly and the bottom picture shows the biscuits just dropped by spoonfuls. Either way they are great, but the rolled biscuits make a nicer presentation.

Beef and Peas with Potato Biscuits

2 lbs ground beef
1 can peas or any vegetables desired
1 can beef gravy
2 1/2 cups soy milk, divided use
2 cup Bisquick baking mix
2 cup instant mashed potato flakes (I use Betty Crocker Potato Buds)

Cook the ground beef in a skillet until browned. Drain the grease then add the peas, gravy and 1/2 cup of the soy milk. Bring the mixture to a boil then pour it in a 9x13 baking dish. Warm the remaining 2 cups of soy milk in the microwave. Add the Bisquick and potato flakes then mix thoroughly. Allow the dough to rest for 2 minutes before rolling into balls, flattening slightly then placing on the ground beef mixture. If desired, you can drop the dough by spoonfuls on to the hot beef mixture instead of rolling it. Bake at 400 for 25-30 minutes or until the biscuits are cooked through and lightly browned.
*  To prepare this meal faster, microwave precooked ground beef (I always keep some in the freezer), peas, gravy and 1/2 cup soy milk for 3 minutes or until hot. Then follow the rest of the instructions as listed.

Egg Free, Dairy Free Sausage Casserole

This was the first time I made this recipe for my family and they all loved it.

2 cans beef or pork gravy (I used Campbell's)
1 1/2 gravy cans water
1 can peas
1 1/2 cups uncooked rice

Place all of the ingredients in a 11x15 baking dish. Stir until thoroughly combined. Cover with foil and bake at 350 for 40-45 minutes or until the rice is tender.
*  Cooked ground beef can be substituted for the sausage.
