Welcome!

My daughter, Jazlyn, is anaphylactic to egg, dairy, peanuts, and tree nuts. When she was first diagnosed, I found it very difficult to find recipes and foods that didn't taste like "allergy" food. Over the last 15 years I have had a lot of fun developing and changing recipes so that they are safe for her. I love to share my recipes so that other families can realize how yummy "allergy" foods can taste. You don't have to sacrifice taste or your favorite foods, you just have to rethink how to make them. I made a promise to Jazzy that I would do my very best to find a way for her to eat any food she wants to try. So far I have been able to keep that promise. I hope your family enjoys these recipes as much as we do.

Egg Free, Dairy Free, Nut Free Baked Potato Chips

My family loves these chips. They can be flavored with any spices you enjoy so there are endless possibilities.

Baked Potato Chips

Slice your potatoes very thin. The thinner you slice the potatoes, the crispier the potato chips will be. Toss them with olive oil and any seasonings you desire. Lay them in a single layer on a parchment lined baking sheet. Bake at 450 for 20-30 minutes or until crispy and golden.

Egg Free, Dairy Free Easy Instant Mashed Potatoes

I know this is a very simple idea, but I've never made mashed potatoes this way. My mom doesn't keep soy milk in her house so I decided to come up with a way that she could prepare instant mashed potatoes that would be safe for Jazzy. This is now our favorite instant mashed potatoes.

Easy Instant Mashed Potatoes

2 cups broth
2 cups instant mashed potatoes flakes (I use Betty Crocker Potato Buds)

Bring the broth to a boil either in a saucepan or in the microwave. Stir in the mashed potato flakes until moistened.

Egg Free, Dairy Free Ham and Scalloped Potatoes Casserole

Before allergies, the only scalloped potatoes I could make were the boxed kind. However, last night I decided to try to try homemade scalloped potatoes with ham using a white sauce. My family really liked this meal and I was pleasantly surprised how creamy the mixture stayed. The girls and I liked fresh ground garlic pepper on top. My husband liked bacon bits on his. The bottom 2 pictures we replaced the ham with cooked ground sausage and the green beans with peas.

Ham and Scalloped Potatoes Casserole

5-7 medium potatoes, thinly sliced
1 lb fully cooked ham, cubed
1 can green beans, optional
4 tbsp dairy free margarine
4 tbsp flour
Salt and pepper to taste
3 1/3 cups soy milk

Place the potatoes, ham and green beans in the bottom of a sprayed 11x13 baking dish. In a medium saucepan over medium heat, melt the 4 tbsp margarine. Whisk in the flour, salt and pepper until combined. Add the soy milk, turn the heat to high, then whisk constantly until the mixture comes to a boil and is smooth and thickened. Pour the soy milk mixture over the potatoes and ham and mix until thoroughly combined. Cover and bake at 325 for 40 minutes. Uncover and bake an additional 60 minutes. Allow to set for 5-10 minutes before serving.
*  Wonderful with cooked ground sausage replacing the ham and peas replacing the green beans.

Egg Free, Dairy Free Beef and Peas with Potato Biscuits

My middle daughter, Tayana, loves dumplings and this time I wanted to try something a little different. The result is a simple to put together meal with really yummy biscuits. The potato biscuits were the highlight of the meal for the girls. The top picture shows the biscuits rolled into a ball and flattened slightly and the bottom picture shows the biscuits just dropped by spoonfuls. Either way they are great, but the rolled biscuits make a nicer presentation.

Beef and Peas with Potato Biscuits

2 lbs ground beef
1 can peas or any vegetables desired
1 can beef gravy
2 1/2 cups soy milk, divided use
2 cup Bisquick baking mix
2 cup instant mashed potato flakes (I use Betty Crocker Potato Buds)

Cook the ground beef in a skillet until browned. Drain the grease then add the peas, gravy and 1/2 cup of the soy milk. Bring the mixture to a boil then pour it in a 9x13 baking dish. Warm the remaining 2 cups of soy milk in the microwave. Add the Bisquick and potato flakes then mix thoroughly. Allow the dough to rest for 2 minutes before rolling into balls, flattening slightly then placing on the ground beef mixture. If desired, you can drop the dough by spoonfuls on to the hot beef mixture instead of rolling it. Bake at 400 for 25-30 minutes or until the biscuits are cooked through and lightly browned.
*  To prepare this meal faster, microwave precooked ground beef (I always keep some in the freezer), peas, gravy and 1/2 cup soy milk for 3 minutes or until hot. Then follow the rest of the instructions as listed.

Egg Free, Dairy Free Fried Potatoes and Sausage

This has always been one of my favorite meals growing up. My mom made this for our family meal this weekend, so the amounts listed are to feed 7 people.

Fried Potatoes and Sausage

1 stick dairy free margarine
4 lb bag potatoes, peeled and sliced thin OR 5 cans diced potatoes
Salt and pepper to taste
2 lb smoked sausage, sliced into bite sized pieces

Melt the margarine in a large deep frying pan. You can use 2 pans if you don't have one large enough to fit all of the ingredients. Once the margarine is melted, add the potatoes, salt and pepper. Cook over medium heat, stirring occasionally, for 45 minutes or until the potatoes are tender. Add the sliced sausage then cook, stirring occasionally and flipping the sausages, for 15 minutes or until heated through.

Combine all of the ingredients in a soup pot. Cook over medium heat, stirring occasionally, until heated through.
* If desired, you can use fresh diced potatoes and uncooked rice plus a total of 6 cups of beef broth. Simmer for 1 hour or until the potatoes and rice are tender.
* You can substitute the sausage for browned ground beef.
* If you are having sandwiches or something else with the soup, you would probably be able to cut this recipe in half.

Egg Free, Dairy Free Creamy Sausage and Potato Bake

Egg Free, Dairy Free Guilt Free Microwave Potato Chips

Potato Chips are one of my family's favorite snacks. I decided to try and make my own without all of the oil so that we could have a healthier potato chip. I made them in the microwave using Pam cooking spray and any seasonings the girls like. They were so fast and easy to make and they were crispy and delicious.

Guilt Free Microwave Potato Chips

Potatoes
Safe cooking spray (I use Pam original)
Seasonings desired - Old Bay, garlic salt, seasoning salt, Mrs. Dash flavors, sea salt, etc.

Peel the potatoes then slice them as thin as possible with a potato mandolin slicer, a regular potato peeler or sharp knife. Place the slices in a single layer on a microwave safe dish. Spray with the cooking spray then sprinkle on any seasonings desired. Microwave until the potatoes start to brown like in the above picture. My batches each took 4 minutes, but the time will vary depending on your microwave and how thin your potato slices are. Be careful, because once they start to brown, they can get over done very quickly.
