My daughter, Jazlyn, is anaphylactic to egg, dairy, peanuts, and tree nuts. When she was first diagnosed, I found it very difficult to find recipes and foods that didn't taste like "allergy" food. Over the last 15 years I have had a lot of fun developing and changing recipes so that they are safe for her. I love to share my recipes so that other families can realize how yummy "allergy" foods can taste. You don't have to sacrifice taste or your favorite foods, you just have to rethink how to make them. I made a promise to Jazzy that I would do my very best to find a way for her to eat any food she wants to try. So far I have been able to keep that promise. I hope your family enjoys these recipes as much as we do.

Egg Free, Dairy Free, Nut Free Sloppy Joes

I love Sloppy Joes, but I wanted a healthier version that still had a lot of flavor. The girls and I loved it, especially over cooked brown rice, pasta, or mashed potatoes.



Sloppy Joes

1-2 lbs ground turkey or ground beef
1 diced pepper
1 diced onion
15.5 oz can tomato sauce
14.5 oz can diced tomatoes
1 tbsp garlic powder
1 tbsp onion powder
1 tsp pepper
1/2 tsp salt

Fry the meat, pepper, and onion in a skillet until done. Add the remaining ingredients then cook and stir until heated and thickened.
*  Freezes perfectly. I like to place a single serving of the frozen Sloppy Joes in a large microwave safe bowl with 1/2 cup brown rice and 3/4 cup water then microwave for 6 minutes or until the rice is done.

Egg Free, Dairy Free, Nut Free Black Beans and Rice

This casserole is one of my favorite combinations - black beans, brown rice, and tomatoes. So good.




Black Beans and Rice

1 tbsp olive oil
1 onion, chopped
15.5 oz can black beans, rinsed and drained
14.5 oz can crushed, diced, or stewed tomatoes, undrained
1 tsp Italian seasoning
1/2 tsp garlic powder
1/2 tsp chili powder
1 1/2 cups raw brown or white Minute rice

Heat the oil in a skillet over medium-high heat. Add the onion then cook and stir until tender. Add the beans, tomatoes, and seasonings. Bring to a boil then stir in the rice. Cover, reduce the heat to low, then simmer for 10 minutes or until the rice is tender.
*  Wonderful topped with salsa.
*  Cooked ground beef can be added if desired.

Egg Free, Dairy Free, Nut Free Crock Pot Cabbage Casserole

I love anything with cabbage. This casserole is easy to prepare and makes plenty to freeze for later.




Crock Pot Cabbage Casserole

5 cups water
15.5 oz can cannellini beans, kidney beans, or black beans
15 oz can tomato sauce
1 cup cooked ground turkey or beef or an additional can of beans
1 cup thinly sliced carrots
1 cup brown or white Minute rice, uncooked
1-2 diced onions
1 medium head of cabbage, chopped
Seasonings desired - I used salt, pepper, Italian seasoning, garlic powder, and onion powder

Combine all of the ingredients in the crock pot. Cover and cook on high for 4 hours.
*  Makes 12 (1 cup) servings.
*  Freezes great.

Egg Free, Dairy Free, Nut Free Spinach Meatballs

The girls and I love these meatballs. We eat them plain, serve them over rice, noodles, use them as a pizza topping, etc. They are also good cold, so we take them with us when we go away.





Spinach Meatballs

2 - 3 pounds ground turkey, chicken, or beef
2 cups chopped spinach
1 finely chopped onion
1 finely chopped pepper
Seasonings desired - I used a mixture of salt, pepper, Italian seasoning, garlic powder,
       and onion powder

Thoroughly combine all of the ingredients. Roll the mixture into 1" balls. Place on a parchment lined baking sheet. Bake at 400 for 20-30 minutes until cooked through. Drain as needed. Serve immediately. You can also freeze on the baking sheet then transfer into a Ziploc bag to store in the freezer.
*  Makes approximately 70 meatballs.

Egg Free, Dairy Free, Nut Free Crock Pot Creamy Ground Beef with Shredded Hash Brown Potatoes

This casserole is very quick to put together and the whole family loved it.





Crock Pot Creamy Ground Beef with Shredded Hash Brown Potatoes

30 oz bag frozen shredded hash brown potatoes
1 can green beans
1 pound cooked ground beef or ground sausage
1 can safe gravy
1/2 cup soy milk
1 tsp pepper
1/4 tsp salt

Place the potatoes in the sprayed crock pot. Top with the green beans. In a separate bowl, combine the ground beef, gravy, soy milk, pepper, and salt. Top the green beans with the ground meat mixture. Do not stir. Cover then cook on high for 3-4 hours or on low for 6-8 hours.

Another simple yummy crock pot meal. I love that this meal takes less than 5 minutes to throw into the crock pot because I keep browned portioned meat in the freezer.



Crock Pot Simple Creamy Ground Beef and Noodles

1 can safe beef gravy
1 can creamed corn
2 cans water
1 lb cooked ground beef, ground turkey or ground sausage
1 box noodles, any shape desired, uncooked

Combine all of the ingredients in a sprayed crock pot. Cover then cook on low for 3-4 hours or until the noodles are cooked.

Egg Free, Dairy Free Simple Meat and Noodle Bake

This recipe is very simple because the noodles are not cooked before baking them. They will bake in the sauce and have a wonderful flavor. Mix and match different meats, vegetable, and pasta shapes for a variety of meals.


Simple Meat and Noodle Bake

1 lb cooked ground beef, cooked diced chicken, turkey, ham, or Polska Kielbasa
1 box noodles, any shape desired, uncooked
1 can creamed corn
1 can vegetables desired such as peas, corn, green beans, mixed vegetables
1 can gravy
1 1/2 cans soy milk, divided use

Combine all of the ingredients except for the 1/2 cup of soy milk. Pour into a sprayed 9x13 baking dish. Pour the remaining 1/2 can of soy milk over top but do not stir. Press down the mixture if needed to be covered with the milk. Use a little additional soy milk if needed. Cover tightly with foil
then bake at 450 for 45 minutes or until the noodles are tender.

Egg Free, Dairy Free, Nut Free Crock Pot Shepherd's Pie

This shepherd's pie is very simple to prepare and turns out very good and satisfying.


Crock Pot Shepherd's Pie

1 lb ground beef
2 cans mixed vegetables
1 can creamed corn
1 can beef gravy
4 cups mashed potatoes (I used instant)

Combine the ground beef, mixed vegetables, creamed corn, and gravy. Pour the mixture into the sprayed crockpot. Spread the potatoes evenly over top. Cover then cook on low for 3-4 hours.

Egg Free, Dairy Free Creamed Ground Beef

A simple, hearty meal. We love Creamed Sausage and Creamed Chicken so I decided to make it with ground beef.

 

Creamed Ground Beef

1 lb ground beef
1/4 cup flour
Salt and pepper to taste
1 1/4 - 1 1/2 cups soy milk

Brown the ground beef then drain most of the grease. Stir in the flour, salt, and pepper until thoroughly mixed. Over medium heat, add the soy milk, stirring constantly, until the mixture reaches the consistency you desire. Serve over hot cooked noodles, rice, mashed potatoes, biscuits, toast or bread.
*  Depending what other sides I have with the meal and how hungry my family is, I usually double this recipe.

Egg Free, Dairy Free Tomato Soup Meatloaf

This Tomato Soup Meatloaf had a nice flavor and held together perfectly. It also reheated great the next day. I made 4 smaller meatloaves instead of 1 big meatloaf. Either way, just make sure that the meatloaf if cooked through. I lost track of time and burnt the outside, but my family still loved the flavor.



Tomato Soup Meatloaf

4 lbs ground beef
1 can condensed tomato soup
3 cups fresh bread cubes
1 tbsp. Italian seasoning
2 tsp pepper
1 tsp salt

Combine all of the ingredients thoroughly. Form the mixture into one large meatloaf or four smaller meatloaves. Place on a sprayed foil lined baking sheet. Bake at 350 for 1 hour or until cooked through.

Egg Free, Dairy Free Sausage and Potato Skillet

This is a quick and simple to prepare all in one casserole that has a great flavor.
 
 
Sausage and Potato Skillet

1 package smoked sausage, diced, 1 lb cooked diced ham or 1 lb cooked ground beef
1 can corn or green beans
2 cans diced potatoes
1 can pork gravy
1 tsp pepper
1/4 tsp salt

Place all of the ingredients in a saucepan over medium heat. Cook and stir until heated through.

Egg Free, Dairy Free Simple Ground Beef and Noodle Bake


This casserole is very quick to prepare because the noodles are not cooked before baking. I also keep cooked ground beef proportioned in the freezer that I can just thaw and add. If you want your noodles more tender, you can use cooked noodles then just bake the casserole until bubbly and heated through.
 
 
Simple Ground Beef and Noodle Bake
 
1 lb cooked ground beef
1 can creamed corn
1 can beef gravy
1 can corn
2 cups soy milk or beef broth
1 box uncooked noodles
 
Combine the ground beef, creamed corn, beef gravy, corn and soy milk in a sprayed 9x13 baking dish. Add the noodles then stir until thoroughly combined. Tightly cover with foil then bake at 350 for 1 hour or until the noodles are tender. Let the casserole set for 10 minutes before serving.
*  If you want your casserole a little saucier, add another can of beef gravy and 2 additional cups of soy milk or beef broth.

Egg Free, Dairy Free Mexican Macaroni Bake

The girls and I love this casserole. My husband doesn't like salsa, so we make it for lunch then freeze the leftovers.



Mexican Macaroni Bake

1 box elbow macaroni, cooked
1 lb cooked ground beef
15.5 oz jar salsa
15.5 oz can dark red kidney beans
15.25 oz can corn
8 oz can tomato sauce

Thoroughly combine all of the ingredients. Transfer to a sprayed 11x15 baking dish. Cover with foil then bake at 350 for 25-30 minutes.
*  To save time, heat all of the ingredients in the noodle pot and heat through.
*  To make this vegan, remove the ground beef. An additional can of kidney beans can be added.

Crock Pot Tomato Hamburger Rice

I love our Crock Pot Hamburger Rice. This is a great creamy version made with tomato soup and tomato sauce in place of gravy. If my husband liked tomatoes, I would add a can of diced tomatoes.


Crock Pot Tomato Hamburger Rice

1-2 lbs cooked ground beef
2 cans condensed tomato soup
2 cups uncooked Minute rice
16 oz can tomato sauce
1 can diced tomatoes, optional

Thoroughly combine all of the ingredients in the crock pot. Cover then cook on low for 3-4 hours or until the rice is tender.

Crock Pot Hamburger Rice

One of our favorite casseroles is the Hamburger Rice Casserole. This crock pot version is just as good with the convenience of using the crock pot.


 
Crock Pot Hamburger Rice
 
1 lb cooked ground beef
2 cans beef gravy
3 cups water
2 cups uncooked Minute rice
1 can creamed corn, optional but very good
 
Combine all of the ingredients in the crock pot. Cover then cook on low for 4-6 hours or on high for 3 hours or until the rice is tender.

Egg Free, Dairy Free Salisbury Steak

We love this meal. The sauce is very good and the Salisbury Steaks are tender. This recipe makes 8 and they reheat very well, so you decide if you want to double the recipe or not.



Salisbury Steak

1 lb ground beef
1/2 cup safe bread crumb, I used this recipe
1/2 cup crushed soup crackers
1/2 cup soy milk
1 can (10 1/4 oz) beef gravy
1/4 cup ketchup
1 tbsp pepper, more or less depending on your taste

Thoroughly combine the ground beef, bread crumbs, crackers and soy milk. Shape the mixture into patties and place them in a sprayed 8x8 baking dish. In a small bowl, combine the gravy, ketchup and pepper. Spoon the gravy mixture over the meat patties. Cover and bake at 350 for 1 hour or until cooked through.
*  Wonderful served over mashed potatoes, rice or noodles.
*  If you want extra gravy, you can double the gravy ingredients.

Egg Free, Dairy Free Meat and Biscuit Casserole

A hearty and yummy casserole made with refrigerated biscuits. You can see we love this casserole by the 3 pictures below. We made it with ground beef, ham and chicken.

 
 
 
Meat and Biscuit Casserole

2 tubes safe refrigerated biscuits
1 lb cooked meat such as ground beef, ground sausage, diced chicken or diced ham
1 can gravy
1 can peas, corn or mixed vegetables
1 cup soy milk or broth

Place the biscuits in a single layer in a sprayed 9x13 baking dish. In a separate bowl, combine the remaining ingredients. Pour the meat mixture evenly over the biscuits. Bake at 400 for 20-25 minutes or until the biscuits are golden.
* If desired, you can use only 1 tube of biscuits in an 8x8 baking dish.

Egg Free, Dairy Free Taco Meat

Usually I just used plain cooked ground beef for our tacos. My husband doesn't like very many spices, so I was wasn't sure if he would like this taco meat. I was surprised when he ate more than usual. My girls loved it and can't wait to have these tacos again.



Taco Meat

2 lb cooked ground beef
1 beef bouillon cube dissolved in 1 1/2 cups water
2 tbsp cornstarch
2 tbsp chili powder
2 tsp onion powder
1 tsp garlic powder
2 tsp sugar
Other seasonings as desired

Combine all of the ingredients in a saucepan. Cook and stir over medium low heat for 10 minutes or until thickened.

Egg Free, Dairy Free Creamy Ground Beef

This is not the prettiest meal, but my family really enjoyed this quick and easy to prepare meal. I'm always trying to figure out really fast meals. Since I keep cooked ground beef in 1 lb portions in the freezer, meals like this can be prepared very fast.


Creamy Ground Beef

1 1/2 lbs cooked ground beef
1 can gravy
1 can water
1 cup mashed potato flakes

Heat the ground beef, gravy and water. Add the potato flakes then simmer and stir for a few minutes until thickened. Serve over hot cooked rice, bread, biscuits or rolls.
