Welcome!

My daughter, Jazlyn, is anaphylactic to egg, dairy, peanuts, and tree nuts. When she was first diagnosed, I found it very difficult to find recipes and foods that didn't taste like "allergy" food. Over the last 15 years I have had a lot of fun developing and changing recipes so that they are safe for her. I love to share my recipes so that other families can realize how yummy "allergy" foods can taste. You don't have to sacrifice taste or your favorite foods, you just have to rethink how to make them. I made a promise to Jazzy that I would do my very best to find a way for her to eat any food she wants to try. So far I have been able to keep that promise. I hope your family enjoys these recipes as much as we do.

Egg Free, Dairy Free Mexican Macaroni Bake

The girls and I love this casserole. My husband doesn't like salsa, so we make it for lunch then freeze the leftovers.

Mexican Macaroni Bake

1 box elbow macaroni, cooked
1 lb cooked ground beef
15.5 oz jar salsa
15.5 oz can dark red kidney beans
15.25 oz can corn
8 oz can tomato sauce

Thoroughly combine all of the ingredients. Transfer to a sprayed 11x15 baking dish. Cover with foil then bake at 350 for 25-30 minutes.
*  To save time, heat all of the ingredients in the noodle pot and heat through.
*  To make this vegan, remove the ground beef. An additional can of kidney beans can be added.

Crock Pot Tomato Hamburger Rice

I love our Crock Pot Hamburger Rice. This is a great creamy version made with tomato soup and tomato sauce in place of gravy. If my husband liked tomatoes, I would add a can of diced tomatoes.

Crock Pot Tomato Hamburger Rice

1-2 lbs cooked ground beef
2 cans condensed tomato soup
2 cups uncooked Minute rice
16 oz can tomato sauce
1 can diced tomatoes, optional

Thoroughly combine all of the ingredients in the crock pot. Cover then cook on low for 3-4 hours or until the rice is tender.

Egg Free, Dairy Free Beefy Tomato Noodles

This is a quick and easy one pot noodle casserole. My girls kept asking for more. I left out the diced tomatoes this time because my husband doesn't like them. Next time I'm planning on stirring them into our individual portions.

Beefy Tomato Noodles

1 lb cooked ground beef
1 box noodles, uncooked
4 cups water
8 oz can tomato sauce
3 beef bouillon cubes
1 can vegetables desired such as peas or corn
1 can diced tomatoes, optional

Combine all of the ingredients in a soup pot except for the vegetables and tomatoes. Bring to a boil, stirring occasionally. Reduce the heat to medium low, cover then allow the mixture to simmer for 10 minutes. Stir in the vegetables and tomatoes, cover then simmer an additional 10 minutes or until the noodles are tender.
*  The ground beef can be substituted with cooked ground sausage or cooked, diced chicken.

Stuffed Peppers

I love stuffed peppers but I've never made them before because my husband and kids don't like cooked peppers. I decided to make a batch for lunch and have leftovers. However, my girls loved the filling and couldn't get enough. I was lucky enough to get the extra peppers because they are so soft and delicious cooked this way.

Stuffed Peppers

2-4 bell peppers, depending how big they are and how full you want them
1 lb cooked ground beef
1 cup uncooked Minute rice, prepared
8 oz can tomato sauce
1 tsp Italian seasoning
1/2 tsp pepper
1/2 tsp garlic salt

Remove the tops, seeds and membranes from the peppers. Place them in an 8x8 baking dish with the hallowed end facing up. In a separate bowl, combine the remaining ingredients. Spoon the mixture evenly into the peppers. Cover the dish with foil. Bake at 350 for 1 hour.

Egg Free, Dairy Free Sausage Potato Rice Soup

I love soup when it's cold outside. My family really enjoyed this soup, especially with extra broth so that they can dip bread or biscuits.

Sausage Potato Rice Soup

2-4 cups beef broth, depending how much broth you want
2 lb sausage, casings removed and browned like ground beef
2 cans diced potatoes
2 cans corn
16 oz can tomato sauce
2 cups cooked rice

Combine all of the ingredients in a soup pot. Cook over medium heat, stirring occasionally, until heated through.
* If desired, you can use fresh diced potatoes and uncooked rice plus a total of 6 cups of beef broth. Simmer for 1 hour or until the potatoes and rice are tender.
* You can substitute the sausage for browned ground beef.
* If you are having sandwiches or something else with the soup, you would probably be able to cut this recipe in half.
