My daughter, Jazlyn, is anaphylactic to egg, dairy, peanuts, and tree nuts. When she was first diagnosed, I found it very difficult to find recipes and foods that didn't taste like "allergy" food. Over the last 15 years I have had a lot of fun developing and changing recipes so that they are safe for her. I love to share my recipes so that other families can realize how yummy "allergy" foods can taste. You don't have to sacrifice taste or your favorite foods, you just have to rethink how to make them. I made a promise to Jazzy that I would do my very best to find a way for her to eat any food she wants to try. So far I have been able to keep that promise. Egg Free, Dairy Free, Nut Free Jell-O Oatmeal Cookies

These cookies have a beautiful color and a subtle flavor from the Blackberry Fusion Jell-O.  The oat flour makes the cookies soft and cakey. Very yummy!





Jell-O Oatmeal Cookies

2/3 cup unsweetened applesauce
1/2 cup soy milk
1 tsp vanilla extract
1 tbsp baking powder
1/2 tsp salt
1 box (3 oz size) Jell-O, any flavor desired
1/4 cup sugar
1 1/2 cups oat flour (I blend quick oats into a flour then measure)
1 cup flour

Combine the applesauce, soy milk, and vanilla. Add the baking powder and salt then mix again. Add the Jell-O and sugar and mix again. Add the oat flour and flour then mix until thoroughly combined. Drop heaping spoonfuls of the dough 2" apart on parchment lined baking sheets. Bake at 350 for 9-11 minutes or until set and the bottoms are golden.
*  Makes about 24 cookies.

Egg Free, Dairy Free Veggie Rice

This is a very simple side dish that doesn't take much more time than just making rice. Adjust the vegetables to suit your family's taste. This was perfect for us. You could also turn this side dish into a fast and simple meal by adding any cooked meat you like such as ground beef, shredded chicken, or diced ham.



Veggie Rice

2 cups Minute rice
2 cups broth
5 baby carrots, shredded or diced small
1/2 cup frozen peas
2 tbsp dairy free margarine, optional

Microwave the rice, broth, and carrots for 8 minutes or until the rice is tender. Stir in the peas and margarine until the peas are thawed.
* If you want the peas cooked more, microwave them with the other ingredients. We liked the texture of the peas just thawed and heated from the hot rice.
* If desired, this side dish can be turned into a main dish by adding any cooked meat such as ground beef, shredded chicken, or diced ham.

Egg Free, Dairy Free Fresh Tomato Soup

This fresh tomato soup is worth the small amount of extra work. It is very good with safe grilled cheese sandwiches, biscuits, or anything you desire.



Fresh Tomato Soup

6 cups chopped tomatoes (since they will be blended, they do not have to be small -
          I cut cherry tomatoes in half)
3 cups chicken broth
3 tbsp dairy free margarine
3 tbsp flour
1 tsp salt
1 tsp sugar
1/2 tsp pepper

Place the tomatoes and broth in a soup pot over medium heat. Cook, stirring occasionally, for 20 minutes over a light boil. Use an immersion blender to blend until smooth. In a separate small saucepan, melt the margarine. Whisk in the flour. Add a little of the tomato mixture then whisk until smooth. Add the salt, sugar, and pepper then heat until thickened.
*  If you don't have an immersion blender, you can allow the mixture to cool a little then blend in a regular blender.

Egg Free,Dairy Free, Nut Free Banana Oat Muffins

These muffins had a wonderful banana flavor and the oats gave them a great texture.





Banana Oat Muffins

1 1/2 cups flour
1 cup instant oats
1/2 cup brown sugar
2 tsp baking powder
1 tsp baking soda
1 tsp cinnamon
1/2 tsp salt
3/4 cup soy milk
1/2 cup unsweetened applesauce
1 tbsp vanilla extract
3 bananas, mashed

Combine the flour, oats, brown sugar, baking powder, baking soda, cinnamon, and salt. In a separate bowl, combine the soy milk, applesauce, and vanilla. Add the flour mixture and bananas to the flour mixture then mix until just combined. Fill sprayed lined muffin cups 2/3 full with the batter. Bake at 400 for 18-20 minutes.
*  1/2 cup safe chocolate chips can be folded in at the end.
*  Cinnamon sugar can be sprinkled on the top before baking.

Egg Free, Dairy Free, Nut Free Perfect Cornbread Muffins

These cornbread muffins have a perfect texture and mild flavor. They are yummy with soups, stews, chili, or by themselves.



Cornbread Muffins

1 cup cornmeal
1 cup flour
1/3 cup sugar
1 tbsp baking powder
1/2 tsp salt
1 cup soy milk
1/4 cup unsweetened applesauce
1/4 cup oil

Combine the cornmeal, flour, sugar, baking powder, and salt. Add the soy milk, applesauce, and oil then mix until just combined. Spoon the mixture evenly into 12 lined and sprayed muffin cups. Bake at 400 for 15-20 minutes or until a toothpick inserted into the center comes out clean.

Egg Free, Dairy Free Baked Tortilla Wrapped Hot Dogs

These hot dogs comes together very fast and my family loves them. I make one sheet of these and one sheet of French fries. Quick and simple when I'm short on time.



Roll a hot dog into a small tortilla shell. (If you have medium tortilla shells, you can tear them in half. If you have large tortilla shells, you can tear them in fourths.) Place on a foil lined baking sheet with the seam side down. Repeat to create the amount you desire. Coat with cooking spray. Bake at 450 for 10-15 minutes or until the tortilla shells are crispy.
*  If desired, you can place a piece of safe soy cheese on the tortilla before placing on the hot dog.

Egg Free, Dairy Free, Nut Free Pita Pizzas

Yum!!!  This is a great way to make a fast pizza. We had an extra one so Jazlyn took it with her to a friend's house for lunch. She said it was great cold.



Pita Pizzas

Spray a safe pita crust with cooking spray or brush a little oil over the top. Spread about 2 tbsp tomato sauce over top. Sprinkle with Italian seasoning or any seasonings you like. Top with any toppings you desire such as pepperoni, sliced black olives, crumbled bacon, ham with pineapple, diced onions, diced green peppers, cooked ground beef, safe soy cheese, etc. Bake at 400 for 5-7 minutes or until the cheese is melted and the crust is golden.

Egg Free, Dairy Free, Nut Free No Bake Perfect Chewy Granola Bars

These granola bars are AMAZING and are our new favorite granola bar recipe!!!  They taste like a chewy candy bar and remind me of the Quaker chewy granola bars I ate before allergies but with so much more flavor. I highly recommend using chocolate chips as the add in. They are very yummy, simple, and fast to make with ingredients that we usually have on hand. Next time I'm going to make a double batch and place it in an 11x15 baking dish.




No Bake Perfect Chewy Granola Bars

1/4 cup brown sugar
1/4 cup dairy free margarine
1/4 cup corn syrup or honey
1 tbsp vanilla extract
2 cups oats
1 cup Rice Krispies
1/4 cup add ins desired such as safe chocolate chips, flaked coconut, raisins, craisins,
             chopped marshmallows, etc.

Place the brown sugar, margarine, and corn syrup in a microwave safe bowl. Microwave for 1 minute, stir to thoroughly combine, then microwave an additional 1 1/2 minutes. Stir in the vanilla. Stir in the oats until thoroughly coated. Stir in the Rice Krispies and add ins until combined. Press the mixture firmly and evenly into a wax paper lined 8x11 baking dish. Freeze for 15 minutes or until firm. Cut into bars then store in the fridge in a tightly covered container.
*  If you would rather not use the add ins, use an additional 1/4 cup of Rice Krispies.

Egg Free, Dairy Free, Nut Free Crock Pot Pineapple Barbecue Chicken

This chicken was so moist it just falls off of the bone and had a fantastic flavor. The girls loved the pineapple cooked this way. Next time I'd like to try this sauce with boneless skinless chicken breasts because the kids weren't thrilled with the bones and skin.



Crock Pot Pineapple Barbecue Chicken

2 1/2 -3 lbs  chicken drumsticks or boneless skinless chicken breasts - frozen or thawed
40 oz bottle safe barbecue sauce
16 oz pineapple chunks - drained - reserve juice

Place the chicken, barbecue sauce, and pineapple juice in the crock pot and stir to coat. Pour the pineapple chunks on top. Cover and cook on high for 2-3 hours or on low for 4-6 hours.
*  The sauce is wonderful served over hot cooked rice.
*  If you use the chicken breasts, you can shred the chicken and mix with the sauce.

Egg Free, Dairy Free, Nut Free Shoo-Fly Cake

I love Shoo-Fly Pie, but Jazlyn doesn't like pie of any kind. I decided to use those flavors to make a cake instead. The result is a tender, moist, and fluffy cake with the unique flavor of the Shoo-Fly Pie.  It is also so easy to make that Tayana made it all by herself. My girls loved this cake and the crumb topping was their favorite. The taste and texture are so good that I highly encourage you to try it.

I made this cake again as a birthday cake for my mom and dad. They loved it, even though my girls ate most of it. Each time I make it I'm amazed how much they devour this cake compared to a traditional vanilla or chocolate cake. I'm not sure what it is, but my girls can't get enough of this Shoo-Fly Cake.

Maleah made this cake for our Sunday School snack and everyone loved it, even a few people who don't like Shoo-Fly Pie.




Shoo-Fly Cake

4 cups flour
1 cup sugar
1 cup brown sugar
1 cup dairy free margarine
2 cups boiling water
1 cup King Syrup
1 tbsp baking soda

Use a pastry blender or a fork to combine the flour, sugar, brown sugar, and dairy free margarine until crumbly. Reserve 1 cup of the crumbs.  To the remaining crumb mixture, add the boiling water, King Syrup, and baking soda. Mix until thoroughly combined. Pour the batter into a sprayed 9x13 baking dish. Sprinkle the reserved crumb mixture evenly over the top. Bake at 350 for 35-40 minutes or until a toothpick inserted into the center comes out clean. Best served at room temperature.

Egg Free, Dairy Free, Nut Free 1 Minute Giant Microwave Chocolate Chocolate Chip Cookie

After the success of our 1 Minute Giant Microwave Chocolate Chip Cookie, we decided to try and make a chocolate version. Personally, I like this one better, but the girls love both. It just depends how much chocolate you want. For me, there is no such thing as too much chocolate. Jazlyn loves these cookies and takes them with her when she needs a dessert. The top 2 pictures have the chocolate chips stirred in and the bottom 2 pictures have the chocolate chips sprinkled on top. We like them better sprinkled on top.


 

 
1 Minute Giant Chocolate Chocolate Chip Cookie

1 tbsp dairy free margarine
2 tbsp brown sugar
1 tbsp cocoa powder
Small pinch salt
1 1/2 tbsp soy milk
1/2 tsp vanilla extract
3 tbsp flour
1-2 tbsp safe chocolate chips

In a small bowl, melt the margarine. Stir in the brown sugar, cocoa, and salt until dissolved. Stir in the soy milk and vanilla. Stir in the flour until thoroughly combined. Stir in the chocolate chips. Spread the mixture thinly and evenly into a circle on a sprayed microwave safe plate. Microwave for 1 minute 15 seconds or until set. Use a spatula to remove the cookie from the plate. Eat warm or allow to cool. The cookie will become firmer as it cools.
*  If you want your cookie edges a bit crunchier, microwave for an additional 15 seconds.
*  Instead of stirring in the chocolate chips, you can spread them on top.
*  Top with sprinkles, shredded coconut, or anything you desire.

Egg Free, Dairy Free, Nut Free 1 Minute Giant Microwave Chocolate Chip Cookie

We love to make our 2 Minute Chocolate Chip Cookie Cake. However, this time we decided to see what would happen if we spread it on a plate instead of cooking it in a bowl. The result was a soft giant cookie that you could pick up a eat. The cookie will be about 4" across. The  picture below is of my 9 year old holding the cookie to give you an idea of how big the cookie will be. When we go somewhere else to eat, we have to bring all of Jazlyn's food with us, including dessert. Since this cookie is ready quickly, it is perfect to take with you for a dessert or snack. The bottom picture is Jazlyn's current favorite. We prepared the batter, but topped it with the chocolate chips, shredded coconut, and sprinkles.

Crock Pot Simple Chicken and Noodle Casserole

We loved the Crock Pot Chicken and Noodles, but I wanted an even easier version so I could just put everything in the crock pot and leave it until it is time to eat.




Crock Pot Simple Chicken and Noodles

1 can safe turkey gravy
1 can creamed corn
2 cans water
1 lb cooked and shredded or diced chicken or turkey
1 box noodles, any shape desired, uncooked

Combine all of the ingredients in a sprayed crock pot. Cover then cook on low for 3-4 hours or until the noodles are cooked.

Egg Free, Dairy Free, Nut Free Cinnamon Sugar Balls

My husband and girls love cinnamon so we decided to try something new. They loved these little balls of cinnamon dough covered in cinnamon sugar. The insides stayed a little doughy and soft while the outside was a little crunchy.





Cinnamon Sugar Balls

1 cup dairy free margarine
1/2 cup sugar
1/2 cup unsweetened applesauce
1/4 tsp salt
2 tsp cinnamon
2 tsp vanilla extract
2 cups flour
1/4 cup sugar mixed with 1 1/2 tsp cinnamon for rolling

Use an electric mixer to cream the margarine and sugar. Add the applesauce, salt, cinnamon, and vanilla and beat again. Add the flour then mix until thoroughly combined. Roll the dough into 1" balls then place them 1" apart on parchment paper lined baking sheets. Bake at 300 for 25-30 minutes or until the bottoms are browned and the cookies are set. Immediately roll in the cinnamon sugar mixture.

Egg Free, Dairy Free, Nut Free Quick and Easy Personal Bisquick Pizza

We love Jazzy's Favorite Pizza. I needed to make a quick personal pizza for Jazlyn to bring along on a field trip that was serving pizza. We topped this pizza with tomato sauce, Italian seasoning, pepperoni, bacon bits, and safe cheese. I cooled the pizza, cut it into fourths then wrapped placed the quarters in an airtight container before placing it in the cooler. This pizza was the perfect size (a little bigger than a Pizza Hut personal pan pizza) and she loved it. It was so simple and yummy that she requested it a few days later to bring along for her youth group lunch. I'm so happy to have a recipe that is great served cold and can be made in just a few minutes.





Quick and Easy Personal Bisquick Pizza

3/4 cup Bisquick
1/4 cup water
A few tablespoons tomato sauce
Italian seasoning, optional
Toppings desired (ground beef, diced sausage, diced ham, bacon, pepperoni, safe cheese, peppers,
         onions, olives, pineapple, etc.)

Combine the Bisquick and water to form a soft dough. Mix in additional Bisquick or water until the dough is not too dry or too sticky. Place the dough on a sprayed foil lined baking sheet. Pat and stretch the dough to form a circle crust for the pizza that is 1/4-1/2" thick. Spread the tomato sauce over the dough. Sprinkle with the Italian seasoning. Top with any toppings you desire. Bake at 425 for 6-8 minutes or until the crust is golden.
*  Wonderful served warm or cold.

Egg Free, Dairy Free, Nut Free Banana Chocolate Chip Oatmeal Cake Cookies

Wow!!! Who Knew that healthy cookies could be this good and satisfying. These yummy, dense, cakey, perfect cookies are made with bananas, oats, and applesauce. They are NOT made with any margarine or oil and they only have 1/3 cup each of sugar and brown sugar. You can leave off the chocolate chips or replace them with craisins, raisins, coconut, etc. but with only 1/3 cup divided between the 3 1/2 dozen cookies, we think they are worth it. My girls and I couldn't get enough. These would be perfect as an on-the-go breakfast with a cup of soy milk and a sliced apple. However, they are so good that my girls don't care how healthy they are. My girls finished four cookies each just while I finished baking the rest of the batch. At least I can feel good about them eating these cookies.





Banana Chocolate Chip Oatmeal Cake Cookies

2 cups instant oats
1 1/2 cups flour
1/3 cup sugar
1/3 cup brown sugar
1/2 tsp cinnamon
1/2 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1 cup unsweetened applesauce
4 ripe mashed bananas
1 tbsp vanilla extract
1/3 cup safe chocolate chips, optional

Combine the oats, flour, sugar, brown sugar, cinnamon, baking powder, baking soda, and salt. Add the applesauce, bananas, and vanilla then mix until thoroughly combined. Fold in the chocolate chips. Drop by 2 tablespoonfuls onto parchment paper lined baking sheets 1" apart. These cookies do not spread they just puff, so you don't have to worry. Bake at 350 for 9-11 minutes or until sets and the bottoms begin to brown. Store tightly covered in the refrigerator.

Egg Free, Dairy Free, Nut Free Crock Pot Rice Pudding

We love rice pudding. Making it in the crock pot is easy because the rice goes in raw. We love the pudding warm and cold. Since first making this recipe in November, we've made it at least once a month.


 
Crock Pot Rice Pudding

3 cups uncooked Minute rice
6 cups soy milk
1 cup sugar, more or less depending how sweet you want your pudding OR
           1/2 cup brown sugar
2 tbsp vanilla extract
1 tbsp cinnamon or to taste

Combine all of the ingredients in a sprayed crock pot. Cook low 2 1/2 hours.
* You can cut this recipe in half and it works perfectly. I like to have extra so we can have some warm the day I make it then chilled the next day.
* It's not quite as creamy and it loses a little flavor, but if you don't want to use so much soy milk (actually I ran out), you can use 3 cups water and 3 cups soy milk.

Egg Free, Dairy Free Crock Pot Potato Corn Chowder

I love using the crock pot and this chowder turned out really good. I made some Drop Biscuits to go with it.  Perfect for an easy winter meal.




Crock Pot Potato Corn Chowder

7-8 cups (6 large potatoes), peeled and diced potatoes
19 oz package frozen corn
1/4 cup flour
Salt, pepper, garlic powder, and onion powder to taste
6 cups chicken broth
1/2 - 1 lb cooked diced chicken, ham, sausage, etc. can be added to the chowder with the potatoes and corn.

Combine the potatoes, corn, flour, and seasonings in the sprayed crock pot. Stir in the broth. Cover then cook on low 7-8 hours or on high for 3-4 hours.

Egg Free, Dairy Free, Nut Free Crispy Lemon Oat Cookies

These cookies have a nice lemon flavor and the oats that give them a crispier texture.




Crispy Lemon Oat Cookies

1/2 cup dairy free margarine
1/2 cup brown sugar
1/4 cup sugar
1/4 cup unsweetened applesauce
2 tbsp lemon juice
1 tsp lemon extract
1 tsp vanilla extract
1 tsp baking powder
1 tsp baking soda
1/4 tsp salt
1 cup flour
1 1/2 cup quick oats

Use an electric mixer to cream the margarine, brown sugar, and sugar. Add the applesauce, lemon juice, lemon extract, and vanilla then beat until thoroughly combined. Add the baking powder, baking soda, and salt then beat again. Add the flour then beat again. Add the oats then beat until thoroughly combined. Drop by tablespoonfuls 2 inches apart on parchment lined baking sheets. Bake at 375 for 10-12 minutes or until golden.

Egg Free, Dairy Free, Nut Free Crock Pot Overnight Oatmeal

We loved waking up to this warm, cinnamon apple oatmeal. It was just as good cold the next morning.





Crock Pot Overnight Oatmeal

3 cups soy milk  (you can use all water, but it may lose some of its creaminess)
3 cups water
3 cups quick oats
1/2 cup brown sugar
3 tbsp vanilla extract
1 tbsp cinnamon
2 apples, chopped, optional

Combine all of the ingredients in a sprayed crock pot. Cover then cook on keep warm for 8-9 hours.
