My daughter, Jazlyn, is anaphylactic to egg, dairy, peanuts, and tree nuts. When she was first diagnosed, I found it very difficult to find recipes and foods that didn't taste like "allergy" food. Over the last 15 years I have had a lot of fun developing and changing recipes so that they are safe for her. I love to share my recipes so that other families can realize how yummy "allergy" foods can taste. You don't have to sacrifice taste or your favorite foods, you just have to rethink how to make them. I made a promise to Jazzy that I would do my very best to find a way for her to eat any food she wants to try. So far I have been able to keep that promise. I hope your family enjoys these recipes as much as we do.

Egg Free, Dairy Free Simple Ground Beef and Noodle Bake


This casserole is very quick to prepare because the noodles are not cooked before baking. I also keep cooked ground beef proportioned in the freezer that I can just thaw and add. If you want your noodles more tender, you can use cooked noodles then just bake the casserole until bubbly and heated through.
 
 
Simple Ground Beef and Noodle Bake
 
1 lb cooked ground beef
1 can creamed corn
1 can beef gravy
1 can corn
2 cups soy milk or beef broth
1 box uncooked noodles
 
Combine the ground beef, creamed corn, beef gravy, corn and soy milk in a sprayed 9x13 baking dish. Add the noodles then stir until thoroughly combined. Tightly cover with foil then bake at 350 for 1 hour or until the noodles are tender. Let the casserole set for 10 minutes before serving.
*  If you want your casserole a little saucier, add another can of beef gravy and 2 additional cups of soy milk or beef broth.

Egg Free, Dairy Free Salisbury Steak

We love this meal. The sauce is very good and the Salisbury Steaks are tender. This recipe makes 8 and they reheat very well, so you decide if you want to double the recipe or not.



Salisbury Steak

1 lb ground beef
1/2 cup safe bread crumb, I used this recipe
1/2 cup crushed soup crackers
1/2 cup soy milk
1 can (10 1/4 oz) beef gravy
1/4 cup ketchup
1 tbsp pepper, more or less depending on your taste

Thoroughly combine the ground beef, bread crumbs, crackers and soy milk. Shape the mixture into patties and place them in a sprayed 8x8 baking dish. In a small bowl, combine the gravy, ketchup and pepper. Spoon the gravy mixture over the meat patties. Cover and bake at 350 for 1 hour or until cooked through.
*  Wonderful served over mashed potatoes, rice or noodles.
*  If you want extra gravy, you can double the gravy ingredients.

Egg Free, Dairy Free Chicken Rice Pie

Another wonderful all-in-one casserole. We really liked the dough on top, which was like a flat biscuit. If desired, you can leave off the biscuit topping.



Chicken Rice Pie

2 cups cooked diced chicken
1 can peas or corn
2 cups cooked rice
1 can gravy
1 can creamed corn
1 cup chicken broth
1 cup flour
1 cup soy milk
1/2 cup dairy free margarine, melted
2 tsp baking powder

Spread the chicken on the bottom of a sprayed 9x13 baking dish. Top evenly with the peas then rice. In a separate bowl, combine the gravy, creamed corn and chicken broth. Pour the gravy mixture over the ingredients, but do not stir. In a separate bowl, combine the flour, soy milk, margarine and baking powder. Pour the biscuit mixture evenly over top. Bake at 400 for 40 minutes.
*  If desired, you can omit the biscuit mixture.

Egg Free, Dairy Free Tortilla Casserole

My girls love tortilla shells used in wraps, as the dough for tortilla shell pizzas, etc. We decided it would be fun to tear them up and put them in a casserole. Once baked, they turn soft and almost reminded me of a dumpling. This is also a quick to make and bake casserole so we are adding it to our list of favorite suppers.


Tortilla Casserole

5-6 tortilla shells (6” each), torn into small pieces
2 lbs cooked ground beef, ground sausage, diced chicken, etc.
2 cans gravy
1 can peas or corn

Thoroughly combine all of the ingredients in a 9x11 baking dish. Bake at 350 for 30 minutes or until heated through.

Egg Free, Dairy Free Creamy Beef and Noodles

Another simple to prepare meal.


Creamy Beef and Noodles

1 box noodles, any shape desired, cooked
1 lb cooked ground beef
15 oz can tomato sauce
1 can beef gravy (I used Campbell's)
1 can creamed corn

Thoroughly combine all of the ingredients then cook until heated through.
