My daughter, Jazlyn, is anaphylactic to egg, dairy, peanuts, and tree nuts. When she was first diagnosed, I found it very difficult to find recipes and foods that didn't taste like "allergy" food. Over the last 15 years I have had a lot of fun developing and changing recipes so that they are safe for her. I love to share my recipes so that other families can realize how yummy "allergy" foods can taste. You don't have to sacrifice taste or your favorite foods, you just have to rethink how to make them. I made a promise to Jazzy that I would do my very best to find a way for her to eat any food she wants to try. So far I have been able to keep that promise. I hope your family enjoys these recipes as much as we do.

Egg Free, Dairy Free Beefy Tomato Noodles

This is a quick and easy one pot noodle casserole. My girls kept asking for more. I left out the diced tomatoes this time because my husband doesn't like them. Next time I'm planning on stirring them into our individual portions.




Beefy Tomato Noodles

1 lb cooked ground beef
1 box noodles, uncooked
4 cups water
8 oz can tomato sauce
3 beef bouillon cubes
1 can vegetables desired such as peas or corn
1 can diced tomatoes, optional

Combine all of the ingredients in a soup pot except for the vegetables and tomatoes. Bring to a boil, stirring occasionally. Reduce the heat to medium low, cover then allow the mixture to simmer for 10 minutes. Stir in the vegetables and tomatoes, cover then simmer an additional 10 minutes or until the noodles are tender.
*  The ground beef can be substituted with cooked ground sausage or cooked, diced chicken.

  1. Is your daughter able to eat store bought pasta without any reaction? I know that the ingredient list does not include egg, but out little one always seems to break out when he eats store bought traditional pasta. The only thing I could determine from my research was that the equipment used to make the pasta must be contaminated with egg.

  2. The only brand of pasta I trust for Jazlyn to eat is Barilla. It has a processed with egg statement, but after speaking with Jazlyn's allergist and Barilla, we tried it and have been using it without any reaction for years.
