This recipe works great as a thick gravy, but it is also a perfect sauce for casseroles. This is a perfect substitute for white sauce if you don't have a safe milk alternative or if you don't have any on hand. You can use it anywhere you would use a white sauce. If you want a thinner gravy/sauce, increase the amount of broth or reduce the amount of flour.
Homemade Gravy
1/4 cup dairy free margarine
1/3 cup flour
2 cups chicken or beef broth
Salt and pepper to taste
Melt the margarine in a saucepan over medium heat. Whisk in the flour, salt, and pepper. Add the broth then whisk until smooth and thickened. Store covered in the fridge for up to 2 days.
* If the cooled gravy is too thick even after reheating, just heat and whisk in more broth.

Egg Free, Dairy Free Quick and Easy Creamy Sausage Casserole
I was really pressed for time one night so I came up with this meal that only took about 15 minutes. My family loved it so much they asked for it again a few days later. This will be added to the list of meals we make the most.
Quick and Easy Creamy Sausage Casserole
1 stick (8 tbsp. / 1/2 cup) dairy free margarine
1 cup flour
2 1/2 cups soy milk
1 lb smoked sausage or polska kielbasa, sliced then cut into quarters
2 cans diced potatoes
2 cans green beans
Melt the margarine in a large saucepan over medium heat. Whisk in the flour. Add the soy milk then cook and whisk until thickened. Add the sausage, potatoes and green beans. Cook and stir until heated through.

Egg Free, Dairy Free Chicken and Noodles in White Sauce
My girls really loved this casserole. Jazlyn even wanted it again the next day for lunch and it reheated perfectly.
Chicken and Noodles in White Sauce
2 tbsp dairy-free margarine
1/3 cup flour
Salt and pepper to taste
2 cups chicken broth
1 can corn, peas, or any vegetables desired
2 cups cooked, diced chicken
1 cup soup crackers, crushed (I used Saltines), optional but very good
1 box noodles, any shape desired
In a soup pot, cook and drain the noodles according to the package. Meanwhile, melt the margarine in a medium saucepan over medium heat. Add the flour, pepper, and salt then whisk until completely combined. Add the chicken broth then whisk constantly until the mixture is thickened. Add the corn, chicken, and crackers to the cooked noodles. Add the white sauce then cook and stir until completely coated and heated through.

1 package smoked sausage or polska kielbasa, sliced then cut into quarters

Chicken and Rice in White Sauce
My middle daughter came up with this all-in-one casserole when it was her turn to pick supper. She asked for chicken, peas and rice in a white sauce. I was impressed that my 8 year old knew that she wanted a white sauce. We were all happy at how wonderful the meal turned out.
