My daughter, Jazlyn, is anaphylactic to egg, dairy, peanuts, and tree nuts. When she was first diagnosed, I found it very difficult to find recipes and foods that didn't taste like "allergy" food. Over the last 15 years I have had a lot of fun developing and changing recipes so that they are safe for her. I love to share my recipes so that other families can realize how yummy "allergy" foods can taste. You don't have to sacrifice taste or your favorite foods, you just have to rethink how to make them. I made a promise to Jazzy that I would do my very best to find a way for her to eat any food she wants to try. So far I have been able to keep that promise. I hope your family enjoys these recipes as much as we do.

Egg Free, Dairy Free, Nut Free No Bake Sunbutter Chocolate Oat Clusters

No bake cookies have always been a family favorite. A few of our favorites are No Bake Chocolate Oat Clusters, No Bake Chocolate Oat Cookies, and No Bake Chocolate Coconut Clusters. However, I wanted to make a healthy version and remove the dairy free margarine and refined sugar. They turned out really good and the girls loved them. The old fashioned oats make the cookies chewier and heartier than the quick oats in my other recipes. If you'd rather them not be as chewy, feel free to use the quick oats or pulse the old fashioned oats a few times in the blender.




No Bake Sunbutter Chocolate Oat Clusters

1/2 cup safe chocolate chips
1/4 cup Sunbutter
1/4 cup unsweetened applesauce or soy milk
1/4 cup cocoa powder
1 1/2 cups old fashioned oats

Microwave the chocolate chips, Sunbutter, applesauce, and cocoa until melted and smooth, stirring after each 30 second interval. Stir in the oats until thoroughly coated, using more if needed. Drop by spoonful onto a wax paper lined baking sheet. Refrigerate for 30 minutes or until set. Store covered in fridge or freezer.
*  Makes about 24 clusters.
* You can also heat the mixture in a saucepan on the stove instead of using the microwave.
* You can pulse the old fashioned oats a few times in the blender or use quick oats if you want a less chewy texture.

Egg Free, Dairy Free, Nut Free No Bake Perfect Chewy Granola Bars

These granola bars are AMAZING and are our new favorite granola bar recipe!!!  They taste like a chewy candy bar and remind me of the Quaker chewy granola bars I ate before allergies but with so much more flavor. I highly recommend using chocolate chips as the add in. They are very yummy, simple, and fast to make with ingredients that we usually have on hand. Next time I'm going to make a double batch and place it in an 11x15 baking dish.




No Bake Perfect Chewy Granola Bars

1/4 cup brown sugar
1/4 cup dairy free margarine
1/4 cup corn syrup or honey
1 tbsp vanilla extract
2 cups oats
1 cup Rice Krispies
1/4 cup add ins desired such as safe chocolate chips, flaked coconut, raisins, craisins,
             chopped marshmallows, etc.

Place the brown sugar, margarine, and corn syrup in a microwave safe bowl. Microwave for 1 minute, stir to thoroughly combine, then microwave an additional 1 1/2 minutes. Stir in the vanilla. Stir in the oats until thoroughly coated. Stir in the Rice Krispies and add ins until combined. Press the mixture firmly and evenly into a wax paper lined 8x11 baking dish. Freeze for 15 minutes or until firm. Cut into bars then store in the fridge in a tightly covered container.
*  If you would rather not use the add ins, use an additional 1/4 cup of Rice Krispies.

Egg Free, Dairy Free, Nut Free No Bake Sunbutter Oatmeal Balls

We love our No Bake Sunbutter Cheerio Balls, but we wanted to try something with oats instead. These Sunbutter Oatmeal Balls are very simple to make and are a yummy, healthy treat. We prefer them refrigerated, but they are also very good eaten right away. You can omit the powdered sugar coating if you prefer. If desired, you can stir in some safe chocolate chips, raisins, craisins, flaked coconut, or anything that sounds good to you. We decided to make this batch plain.



No Bake Sunbutter Oatmeal Balls

1 cup instant oats
1/2 cup oat flour (I blended 1/2 cup instant oats in the blender)
1/2 cup corn syrup or honey
1/2 cup Sunbutter
1/4 - 1/2 cup safe chocolate chips, raisins, craisins, flaked coconut, etc. - optional
Confectioner's sugar for rolling - optional

Thoroughly combine all of the ingredients except for the confectioner's sugar. Roll the mixture into bite-sized balls. Coat with confectioner's sugar if desired. Serve immediately or refrigerate until ready to eat.

Egg Free, Dairy Free, Nut Free No Bake Chewy Granola Bars

These granola bars are absolute perfection. They are chewy and yummy. They remind me of the ones I bought in the grocery store before Jazlyn's allergies. Even my picky husband loves these granola bars. I also love that these granola bars are ready in just a few minutes. I made a triple batch to take on our trip to Disney World. Once we arrived at our hotel, I put them in the fridge and they stayed good until they ran out (about 1 1/2 weeks). I'm sorry I didn't get a better picture. The ones I took were blurry. I'm sure I will be making them again soon, so I will add better pictures then.


No Bake Chewy Granola Bars

1/2 cup dairy free margarine
1/3 cup brown sugar
3 tbsp corn syrup, honey or molasses
3 cups quick oats
1 tsp baking powder
1/2 cup mix-ins desired such as raisins, craisins, safe chocolate chips, flaked coconut, etc.

Place the margarine and brown sugar in a microwave safe bowl. Microwave for 30 seconds or until the margarine is melted. Stir until the brown sugar is dissolved. Stir in the corn syrup. Add the oats and baking powder then stir until thoroughly combined. Fold in the mix-ins you desire. Press the mixture firmly and evenly into a sprayed microwave safe 8x11 baking dish (or use two 8x8 baking dishes if you want your granola bars thinner). Microwave for 5 minutes or until puffed and almost set. Allow to cool before cutting into bars or squares. Store at room temperature or in the fridge tightly covered.

Egg Free, Dairy Free, Nut Free No Bake Sunbutter Cheerio Balls

Tayana wanted to make a sweet snack by herself. The girls couldn't get enough of these Cheerio and Sunbutter treats.


 

No Bake Sunbutter Cheerio Balls

2 cups Sunbutter
½ cup corn syrup
¼ cup honey
¼ cup King syrup or maple syrup
5-6 cups Cheerios

Thoroughly combine the Sunbutter, corn syrup, honey and King Syrup. Stir in the Cheerios until evenly coated. Press and roll the mixture into bite sized balls. Place on a wax paper lined baking sheet and refrigerate for 2 hours or until set. Store in a tightly sealed container in the fridge.
*  As long as you have 1 total cup of sweetener, you can change the corn syrup, honey and King syrup as desired.

Egg Free, Dairy Free, Nut Free No Bake Sunbutter Oat Cookies and Bars

My girls love No Bake Chocolate Oat Clusters. However my dad is not a chocolate fan so I decided to try and make them with Sunbutter instead of chocolate. They were very good and stayed soft. Jazlyn liked dipping her cookies in chocolate syrup or topping them with safe chocolate chips.




No Bake Sunbutter Oat Cookies and Bars

3-4 cups quick oats
1/3 cup Sunbutter
1 tbsp vanilla extract
3/4 cup brown sugar
1/2 cup soy milk
1/4 cup dairy free margarine

In a large bowl, combine the oats, Sunbutter and vanilla. Place the brown sugar, soy milk and margarine in a saucepan. Cook and stir over medium heat until the mixture comes to a boil. Boil, without stirring, for 1 minute. Pour the brown sugar mixture over the oat mixture then stir until thoroughly combined. Roll the mixture into balls, flatten them slightly then place them on wax paper until set.
* To make cookie bars, transfer the mixture into an 8x11 pan that has been lined with parchment paper. Press down firmly and evenly. Allow the mixture to cool before cutting into squares.
* If desired, you can stir some safe chocolate chips into the mixture.

Egg Free, Dairy Free, Nut Free No Bake Chocolate Oat Cookies

I was getting ready to make our favorite No Bake Chocolate Oat Clusters when I decided I would like to try and make them a little "healthier" and less calories by reducing the sugar by half then increasing the cocoa and oats. I didn't think it was possible to make the other recipe any better, but we actually like these cookies more. Instead of being super sweet, they are super chocolately instead. We also liked the softer texture. Since we were having friends over, we decided to roll the cookies to make them look prettier. However, if you want to, you can just drop the mixture onto wax paper by the spoonful.



No Bake Chocolate Oat Cookies


1 cup sugar
1/2 cup cocoa powder
1/2 cup dairy free margarine
1/2 cup soy milk
4 cups quick oats
1 tbsp vanilla extract

Place the sugar, cocoa, margarine and soy milk in a saucepan. Cook and stir over medium heat until the mixture comes to a boil. Boil, without stirring, for 1 minute. Remove the saucepan from the heat then stir in the oats and vanilla until thoroughly combined. Roll the mixture into balls, flatten them slightly then place them on wax paper until set.
*  If desired, you can drop the mixture by spoonfuls onto wax paper instead of rolling them.

Egg Free, Dairy Free, Nut Free No Bake Chocolate Coconut Clusters

If you like coconut and chocolate, these no bake cookies should go on your must try list. These cookies have a wonderful chewy texture. The flavor slightly reminds me of Mounds bars. They are not too sweet, they are just the perfect combination of coconut and chocolate. Even my dad that doesn't like coconut liked these cookies. I'm thrilled to have another no bake cookie for those days that we are short on time but need a snack to take somewhere.

 


 
No Bake Chocolate Coconut Clusters

1 cup safe chocolate chips
1/3 cup dairy free margarine
13 large marshmallows
2 cups quick oats
1 cup flaked coconut

Place the chocolate chips, margarine and marshmallows in a medium saucepan over medium heat. Cook, stirring constantly, until melted and smooth. Remove the saucepan from the heat then stir in the oats and coconut until thoroughly combined. Drop by spoonfuls onto a wax paper lined baking sheet. Roll and flatten slightly if you want a prettier cookie. Refrigerate until firm. Store between layers on wax paper in a covered container in the fridge.

Egg Free, Dairy Free, Nut Free Granola Candy Bars

I was attempting to make a no-bake granola bar. However, when my girls tasted the bars, they kept asking for more candy bars instead of granola bars. They make a great grab and go breakfast or snack. These granola bars pack wonderfully in Ziploc bags or foil.



Granola Candy Bars

1/2 cup brown sugar
1/2 cup Sunbutter
1/4 cup corn syrup
2 cups oats
1 1/2 cups Rice Krispies
1 1/2 tsp vanilla extract
1/2 cup safe chocolate chips
Place the brown sugar, Sunbutter and corn syrup in a microwave safe bowl. Microwave for 2 minutes or until the mixture comes to a boil, stirring every minute. Add the oats, Rice Krispies and vanilla then stir until thoroughly combined. Stir in the chocolate chips. Press the mixture firmly and evenly into a sprayed 8x8 baking dish. Cool before cutting. Store tightly covered.
*  These granola bars can be doubled and placed in a 9x13 baking dish.

Egg Free, Dairy Free, Nut Free No Bake Chocolate Sunbutter Oat Clusters

My traditional No Bake Chocolate Oat Clusters have been a favorite for a long time. However, tonight I wanted to try something different, so I decided to add some Sunbutter flavor. These cookies are so yummy and wonderful. Plus, they are so fast and easy to make. Jazlyn said that these are one of her all-time favorite cookies. Feel free to shape these cookies into prettier shapes, roll them to make them more uniformly shaped, etc. I just use my mixing spoon to drop a spoonful. They are much faster to make and the kids don't care if they look perfect. They just care that they taste perfect.


No Bake Chocolate Sunbutter Oat Clusters

2 cups sugar
1/2 cup cocoa powder
1/2 cup dairy free margarine
1/2 cup soy milk
1 1/2 tsp vanilla extract
5 cups oats
3/4 cup Sunbutter

Place the sugar, cocoa, margarine and soy milk in a saucepan. Cook over medium heat, stirring constantly, until the mixture comes to a boil. Boil without stirring for 1 minute. Add the Sunbutter then stir until thoroughly combined. Remove the saucepan from the heat then add the vanilla and oats. Stir until the oats are completely coated. Drop by spoonful onto wax paper. Allow to cool until completely set. Store at room temperature between sheets of wax paper in a tightly covered container.

Egg Free, Dairy Free, Nut Free No Bake Chocolate Oat Clusters

This is one of my go-to dessert recipes because they are simple, fast and everyone loves them.


No Bake Chocolate Oat Clusters

1/2 cup dairy-free margarine
2 cups sugar
6 tbsp cocoa powder
1/2 cup soy milk
3 1/2 cups quick cooking oats
1 1/2 tsp vanilla extract

Place the margarine, sugar, cocoa and soy milk in a large saucepan. Place over medium heat. Continue to heat, stirring constantly, until the margarine melts. Bring to a full boil then boil, without stirring, for 1 minute. Remove the pan from the heat and thoroughly stir in the oats and vanilla. Drop by spoonful onto waxed paper to cool. Store in an airtight container at room temperature
*  If the mixture is too gooey, add more oats until the spoonfuls of the mixture hold together.
