My daughter, Jazlyn, is anaphylactic to egg, dairy, peanuts, and tree nuts. When she was first diagnosed, I found it very difficult to find recipes and foods that didn't taste like "allergy" food. Over the last 15 years I have had a lot of fun developing and changing recipes so that they are safe for her. I love to share my recipes so that other families can realize how yummy "allergy" foods can taste. You don't have to sacrifice taste or your favorite foods, you just have to rethink how to make them. I made a promise to Jazzy that I would do my very best to find a way for her to eat any food she wants to try. So far I have been able to keep that promise. Egg Free, Dairy Free Crock Pot Tomato, Beef and Potatoes

This is a wonderful, filling, all-in-one crock pot casserole.



Crock Pot Tomato, Beef and Potatoes

6 medium potatoes, peeled and thinly sliced
2 lbs ground beef, browned
1 can peas, optional
1 can condensed tomato soup
1/2 soup can water

Place 1/2 of the potatoes in the bottom of a sprayed crock pot. Layer 1/2 of the ground beef then 1/2 of the peas over top of the potatoes. Repeat the layers of potatoes, ground beef and peas. Pour the tomato soup and water over top and do not stir. Cover and cook on low for 4-6 hours or until the potatoes are very tender.
*  1 can of diced tomatoes would be a wonderful addition to this casserole, but my husband doesn't like tomatoes.
