My daughter, Jazlyn, is anaphylactic to egg, dairy, peanuts, and tree nuts. When she was first diagnosed, I found it very difficult to find recipes and foods that didn't taste like "allergy" food. Over the last 15 years I have had a lot of fun developing and changing recipes so that they are safe for her. I love to share my recipes so that other families can realize how yummy "allergy" foods can taste. You don't have to sacrifice taste or your favorite foods, you just have to rethink how to make them. I made a promise to Jazzy that I would do my very best to find a way for her to eat any food she wants to try. So far I have been able to keep that promise. I hope your family enjoys these recipes as much as we do.

Egg Free, Dairy Free, Nut Free Barbecue Sauce

This barbecue sauce is chunky and flavorful and refined sugar free. So good.






Barbecue Sauce

1 tbsp olive oil
1 finely chopped onion
2 tbsp mince garlic
1/4 cup unsweetened applesauce
1/4 cup maple syrup, honey, or molasses or a mixture
1/4 cup balsamic vinegar
1 tbsp mustard
8 oz tomato sauce
1 tsp chili powder
1/4 tsp salt
1/4 tsp pepper
1/2 tsp crushed red pepper

Heat the oil in a saucepan over medium-low heat. Add the onion and sauté 5 minutes. Add the garlic and sauté for 1 minute. Add the remaining ingredients and whisk to combine. Reduce the heat to low and simmer for 30 minutes, whisking occasionally, until thickened.
*  Store in a glass jar tightly covered.

Meme's Oven Baked BBQ Ribs

Ribs are one of my favorite things to order at a restaurant. However, my mom's are every bit as tender and yummy as the restaurant and Jazlyn can have them. By the time I remembered to take a picture, this is all that was left.



Meme's Oven Baked BBQ Ribs

2 packs of boneless ribs (4 long country ribs each pack or equivalent)
2 safe bottles of barbecue sauce - 40 oz each bottle
                              (Sweet Baby Rays Honey BBQ sauce sticks really well to the ribs -
                                read the label to make sure it is safe)
Cooking bag

Pour one bottle of the barbecue sauce into the bottom of the cooking bag. Place the ribs over top. Pour the other bottle of the barbecue sauce over top. Seal the bag then place on a baking sheet. Bake at 350 for 1 1/2 hours. Shake the bag using tongs to make sure the ribs don't stick. Bake for an additional 1 1/2 hours. If desired, cut the ribs into smaller pieces before serving.
*  If you want to make a smaller amount, just use 1 pack of ribs and 1 bottle of sauce.
*  If you don't want to shake the bag halfway through, the ribs will still be fine, they just might stick a little.

Egg Free, Dairy Free, Nut Free Crock Pot Pineapple Barbecue Chicken

This chicken was so moist it just falls off of the bone and had a fantastic flavor. The girls loved the pineapple cooked this way. Next time I'd like to try this sauce with boneless skinless chicken breasts because the kids weren't thrilled with the bones and skin.



Crock Pot Pineapple Barbecue Chicken

2 1/2 -3 lbs  chicken drumsticks or boneless skinless chicken breasts - frozen or thawed
40 oz bottle safe barbecue sauce
16 oz pineapple chunks - drained - reserve juice

Place the chicken, barbecue sauce, and pineapple juice in the crock pot and stir to coat. Pour the pineapple chunks on top. Cover and cook on high for 2-3 hours or on low for 4-6 hours.
*  The sauce is wonderful served over hot cooked rice.
*  If you use the chicken breasts, you can shred the chicken and mix with the sauce.
