My girls loved this meal and they are already asking for it again. Even my daughter who doesn't like peas had seconds.
Beef and Noodle Skillet
1/4 cup dairy free margarine
3/4 cup water
1/4 cup flour
1 cup soy milk
1 lb ground beef, browned
1 box noodles, any shape desired, cooked
1 can peas
Place the margarine and water in a large pot. Heat over medium-high, whisking constantly, until the margarine is melted. Whisk in the flour until fully incorporated. Slowly whisk in the soy milk. Continue to whisk and cook until thickened. Stir in the ground beef, noodles and peas to fully coat them in the sauce then heat through.

My daughter, Jazlyn, is anaphylactic to egg, dairy, peanuts, and tree nuts. When she was first diagnosed, I found it very difficult to find recipes and foods that didn't taste like "allergy" food. Over the last 15 years I have had a lot of fun developing and changing recipes so that they are safe for her. I love to share my recipes so that other families can realize how yummy "allergy" foods can taste. You don't have to sacrifice taste or your favorite foods, you just have to rethink how to make them. I made a promise to Jazzy that I would do my very best to find a way for her to eat any food she wants to try. So far I have been able to keep that promise. Egg Free, Dairy Free Roast and Noodles
This is another one of our favorite meals. I like to make this if we have other people over because it makes plenty. The leftovers also freeze well. This recipe takes a while to cook, but it is very simple and doesn't require much time at all to prepare.
Roast and Noodles
3 lb roast
4 beef bouillon cubes
3 quarts hot water
16 oz spaghetti noodles, uncooked
In a roasting pan, place the roast, bouillon cubes and water. Cover and bake at 325 for 3 hours. Remove the pan from the over and transfer the roast to a cutting board. Shred the roast and return it to the water. Add the noodles and stir to cover all of the noodles with the water. Cover the pan and bake an additional 1 hour and 15 minutes or until the noodles are tender.

Egg Free, Dairy Free Grilled Sausage and Browned Butter Noodles
OK, this really isn't much of a recipe. It's just another simple meal that my family loves.
Grilled Sausage and Browned Butter Noodles
1-2 lbs Polska Kielbasa or Smoked Sausage
1 box noodles, any shape, cooked and thoroughly drained
2-4 tbsp dairy free margarine
Cut the sausages in portion sized pieces. Place the sausages on the grill outside or a large indoor electric grill (I love my George Foreman grill) and grill until cooked through. Meanwhile, place the margarine in a small saucepan and cook over medium heat until melted and starting to brown. Pour the melted margarine over the noodles and mix thoroughly. Serve.

Egg Free, Dairy Free Noodle Casserole with Sausage Topping
Jazzy loves noodles and sausage and this is another way that we like to prepare them.
Noodle Casserole with Sausage Topping
8 oz noodles, uncooked
1 can condensed tomato soup (I use Campbell's)
1 tbsp corn starch
Salt and pepper to taste
1/2 cup water
1 lb sausage (I use Hillshire Farm Polska Kielbasa or Smoked Sausage)
Cook the noodles as directed on the package, drain and remove the noodles from the pot. In the same pot, combine the tomato soup, corn starch, salt, pepper and water then simmer for 10 minutes over low heat. Add the noodles back to the pot and stir to thoroughly combine. Pour the mixture into a greased 9x13 baking dish. Arrange the sausages over the noodle mixture. Bake at 350 for 30-45 minutes or until the sausage is thoroughly cooked and the mixture is hot and bubbly.

Egg Free, Dairy Free Crock Pot Pizza
This is one of Jazzy's most requested meals and a family favorite.
Crock Pot Pizza
2 lbs sausage, casings removed and browned like ground beef or ground beef or a combination
16 oz noodles, any shape desired, uncooked (I prefer elbows or small shells)
2 (26.5 oz each) cans spaghetti sauce
8 oz pepperoni, chopped (I use Hormel)
Combine all of the ingredients in a sprayed crock pot. Cover and cook on low for 4 hours. Change the temperature to keep warm until ready to serve.
* Ground beef can be used in place of the sausage.
* You can add diced onions, green peppers or anything else to suit your family's taste.
* I freeze leftovers in individual containers for a quick lunch.
* The longer the ingredients stay in the keep warm mode, the softer the noodles will become and the more the flavors will combine.

This very creamy chicken and noodle supper is easy to prepare. I love my crock pot.
Crock Pot Chicken and Noodles
2 cans gravy (I use Campbells - note that the chicken is NOT safe)
2 cans water
2 lbs boneless, skinless chicken breasts, cut into bite-sized chunks
1 box noodles, any shape desired, uncooked
1 can creamed corn
Combine the gravy and water in the crock pot. Stir in the chicken. Cover and cook on high for 3-4 hours or on low for 6-8 hours. One hour before you are ready to eat, stir in the noodles and creamed corn. A little additional water may be required to cook the noodles.

Egg Free, Dairy Free Creamy Hot Dogs and Noodles
If you like tomato soup, this would be a great meal to try. The soy milk will create a creamier sauce on the noodles, but the water also produces a good flavor. The first picture we used hot dogs and the second picture we used sliced smoked sausage.
Creamy Hot Dogs and Noodles
2 cans condensed tomato soup (I use Campbell's)
2 soup cans soy milk or water
1 box noodles, any shape desired, uncooked
6 hot dogs, cooked and diced OR 1/2 lb of any cooked and diced or sliced meat desired
Combine the soup and soy milk in a large saucepan. Add the dry noodles and hot dogs and thoroughly combine. Heat to a simmer and cook for 15-25 minutes or until the noodles are tender and the sauce has thickened, stirring frequently.
