My daughter, Jazlyn, is anaphylactic to egg, dairy, peanuts, and tree nuts. When she was first diagnosed, I found it very difficult to find recipes and foods that didn't taste like "allergy" food. Over the last 15 years I have had a lot of fun developing and changing recipes so that they are safe for her. I love to share my recipes so that other families can realize how yummy "allergy" foods can taste. You don't have to sacrifice taste or your favorite foods, you just have to rethink how to make them. I made a promise to Jazzy that I would do my very best to find a way for her to eat any food she wants to try. So far I have been able to keep that promise. Egg Free, Dairy Free, Nut Free Perfect Brownies

We just had Jazlyn's Epi-Pen party. Every year when her Epi-Pen expires she picks the meal and dessert, her grandparents come over, and we have a fun night together. This year she wanted to make brownies. I've made many brownies before, but none of them were quite right. However, Jazlyn and I worked together on these brownies and they are absolutely perfect. They are moist, a little cakey, and so very good. Jazlyn wanted to add a layer of chocolate chips in the middle of them, which was a wonderful addition.





Perfect Brownies

2 cups flour
1 1/2 cups sugar
3/4 cup cocoa powder
1 tsp baking powder
1/2 tsp salt
1 cup water
1 cup unsweetened applesauce
1/4 cup oil
1 tbsp vanilla extract
1/4 - 1/2 cup safe chocolate chips, optional

Combine the flour, sugar, cocoa, baking powder, and salt. Add the applesauce, oil, and vanilla then mix until thoroughly combined. Spread half of the batter into a sprayed 9x13 baking dish. Sprinkle the chocolate chips evenly over the top. Spread the remaining half of the batter evenly over the chocolate chips. Bake at 350 for 30 minutes or until a toothpick inserted into the center comes out clean.
*  If desired, you can omit the layer of chocolate chips.
*  All of the ingredients can be halved then baked in an 8x8 baking dish.

Egg Free, Dairy Free Microwave Mint Chocolate Brownies

Jazlyn made this lightly mint flavored yummy chocolate brownies. These brownies are not the gooey chewy kind. They are very moist, a little cakey, and very yummy. If you don't like mint in your brownies, you can omit it for traditional chocolate brownies.




Microwave Mint Chocolate Brownies

2/3 cup sugar
3/4 cup unsweetened applesauce
1/4 cup oil
1 tsp vanilla extract
1/2 tsp mint extract
1 cup flour
1/4 cup cocoa powder
1/2 tsp salt

Combine the sugar, applesauce, oil, vanilla, and mint. In a separate bowl, combine the flour, cocoa, and salt. Add the flour mixture to the sugar mixture then stir until thoroughly combined. Spread the mixture evenly into a sprayed 8x8 microwave dish. Microwave for 4-5 minutes or until set and the edges appear dry. Make sure that you don't overcook the brownies because they will dry out. Cool completely before cutting into squares.
*  You can omit the mint extract if you want plain chocolate brownies.

Egg Free, Dairy Free Brownies

These brownies are more cakey than gooey, but they have a good flavor.

Brownies

1 1/3 cups flour
1 cup sugar
1/3 cup cocoa powder
1/2 tsp baking powder
1/2 tsp salt
1/2 cup water
1/2 cup oil
1 tsp vanilla extract

Combine the flour, sugar, cocoa, baking powder and salt. Add the water, oil and vanilla then mix until thoroughly combined. The batter will be thick. Pat the mixture evenly into a sprayed 8x8 baking dish. Bake at 350 for 20-25 minutes or until a toothpick inserted in the center comes out clean.
* Use a 9x13 baking dish for a double batch.

Chocolate Chip Brownies

My youngest daughter just celebrated her 5th birthday. She will be having a rainbow owl cut out cake, made from my family favorite chocolate cake recipe, for her birthday party so she wanted something different on her birthday. She chose to make these brownies to put her candles in. The great thing about this recipe is that she could make it with just a little help from me since it didn't require an electric mixer. She had so much fun mixing the ingredients and spreading it in the pan. To serve, we put out Pillsbury's spray vanilla and chocolate frosting and several different sprinkles so that the girls could decorate their own. It is a more cake like brownie, but the flavor is amazing. The girls prefer this brownie over the gooey brownie I made a little while back. Personally, I think the frosting had a lot to do with that too. My brownies stuck to the sprayed pan so next time I will prepare them in a sprayed and foil lined pan like I stated for you in the instructions.



Chocolate Chip Brownies


2 cups flour
2 cups sugar
3/4 cup cocoa powder
1 tsp baking powder
1 tsp salt
1 cup water
1 cup oil
1/4 cup unsweetened applesauce or additional water
1 tsp vanilla extract
3/4 cup safe chocolate chips

Line a 9x13 baking dish with foil, leaving a 2” overhang at the opposite ends for handles. Spray with a nonstick cooking spray. Combine the flour, sugar, cocoa, baking powder and salt. Add the water, oil, applesauce and vanilla then mix until thoroughly combined. Stir in the chocolate chips. Spread the mixture evenly into the prepared baking dish. Bake at 350 for 30-35 minutes or until the top is no longer shiny and a toothpick inserted into the center comes out clean. Cool before cutting into squares.
* If desired, you can omit the chocolate chips.

Egg Free, Dairy Free, Nut Free Brownies

These brownies had a wonderfully crunchy top and bottom with a chewy moist center. Admittedly, they did not have the prettiest appearance, but everyone loved the flavor and texture.


Brownies

3/4 cup safe chocolate chips
1/2 cup dairy free margarine
1 1/2 cups sugar
2 tsp vanilla extract
1/2 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
1/2 cup unsweetened applesauce
1 cup flour
2 tbsp cocoa powder

Place the chocolate chips and margarine in a microwaveable bowl. Microwave until melted and smooth, stirring every 30 seconds. Add the sugar, vanilla, baking powder, baking soda and salt then stir until combined. Stir in the applesauce. Add the flour and cocoa then stir until thoroughly combined and smooth. Spread the batter evenly into a sprayed 8x8 baking dish. Bake at 350 for 45-55 minutes or until a toothpick inserted into the center comes out with just a few moist crumbs sticking to it. Cool completely before cutting into bars or squares.
* 1/2-1 cup of safe chocolate chips can be stirred into the batter at the end if you would like chocolate chip brownies.

Egg Free, Dairy Free, Nut Free Banana Fudge Brownies

I had some bananas that were getting to ripe and wanted to try something different. Be warned that these brownies have a strong banana flavor. However, since my girls and I love bananas, this is a good thing. These brownies taste like a moist banana bread mixed with a fudgy brownie. These are the prettiest brownies that I have made since Jazlyn's allergies. They hold together very well and have a nice appearance.


Banana Fudge Brownies

1/2 cup dairy free margarine
2 cups safe chocolate chips
1 1/3 cups brown sugar
1 cup unsweetened applesauce
1 cup mashed ripe bananas
2 tsp vanilla extract
1/2 tsp salt
1 1/2 cups flour

Melt the margarine then stir in the chocolate chips until melted and smooth. In a separate bowl, combine the brown sugar, applesauce, bananas, vanilla and salt. Add the melted chocolate mixture then stir until thoroughly combined. Add the flour then stir just until incorporated. Spread the batter evenly into a sprayed 9x13 baking dish. Bake at 325 for 30-40 minutes or until the top is no longer glossy and a toothpick inserted into the center comes out with a few moist crumbs. Be careful not to over bake the brownies. Cool before cutting into bars or squares.
* These brownies will have a moist chewy texture, not a cakey texture.
* If you would like a milder banana flavor, reduce the mashed bananas to 1/2 cup.
