This pear cobbler is fantastic. The warm pears are perfect with the sweet dumplings on top. The girls and I like to sprinkle cinnamon sugar on top. We also like to place some in a bowl and top with soy milk.
Pear Cobbler
2 cans sliced or diced pears (15 1/4 oz each), undrained
1 tsp cornstarch
1 tsp vanilla extract
1 cup flour
1/2 cup sugar
1 tsp baking powder
1/4 tsp salt
6 tbsp dairy free margarine, cut into pieces
1/4 cup boiling water
Pour the pears and juice into an 8x11 baking dish. Stir in the cornstarch and vanilla. In a separate bowl, combine the flour, sugar, baking powder, and salt. Use a pastry blender, forks, or your hands to mix in the margarine until it resembles small crumbs. Stir in the hot water until just combined. Drop the batter by 12 spoonfuls over top of the pears. Bake at 425 for 20-25 minutes or until the tops are golden and the insides are cooked through.
* Peaches can be used in place of pears.
* Cinnamon sugar can be sprinkled over top if desired.
* Good served warm or cold.

My daughter, Jazlyn, is anaphylactic to egg, dairy, peanuts, and tree nuts. When she was first diagnosed, I found it very difficult to find recipes and foods that didn't taste like "allergy" food. Over the last 15 years I have had a lot of fun developing and changing recipes so that they are safe for her. I love to share my recipes so that other families can realize how yummy "allergy" foods can taste. You don't have to sacrifice taste or your favorite foods, you just have to rethink how to make them. I made a promise to Jazzy that I would do my very best to find a way for her to eat any food she wants to try. So far I have been able to keep that promise. Egg Free, Dairy Free, Nut Free Tofu Peach Ice Cream
Jazlyn was craving Tofu Banana Yogurt, but we were out of bananas. We decided to try it with peaches instead. The bananas definitely helped to make the yogurt creamier, so we decided to try freezing it into ice cream. Jazlyn loved it topped with chocolate syrup. After being frozen, it became a little too hard to scoop, so I softened it briefly in the microwave.
Tofu Peach Ice Cream
14 oz firm tofu
3/4 - 1 can peaches
1/2 - 1 tsp vanilla extract
2 - 4 tbsp sugar, or as desired for sweetness
Place all of the ingredients into the blender then process until smooth and thoroughly combined. Eat immediately as a yogurt or freeze into ice cream.
* If the ice cream is too hard to scoop, microwave it briefly to soften.
* For an extra treat, top with chocolate syrup.

Egg Free, Dairy Free, Nut Free Meme's Fruit Cobbler
My mom has been making this dessert since I was little. Now my girls love it just as much as me. You can use any fruit your family likes such as pears, peaches, etc.
Meme's Fruit Cobbler
1/4 cup dairy free margarine
1 can diced or sliced pears, peaches, etc., drained, reserving the syrup
3/4 - 1 cup sugar (depending on how sweet your fruit is and your taste)
3/4 cup soy milk
1 1/2 tsp vanilla extract
1 cup flour
Melt the margarine then place it in a 9x9 baking dish. Swirl the dish so that the margarine evenly coats the bottom. In a separate bowl, combine 2/3 cup of the reserved pear syrup, sugar, soy milk and vanilla. Add the flour then stir until thoroughly combined. Spoon the batter evenly over the margarine. Use a spoon or knife to swirl the batter and margarine together. Arrange the pears evenly over the batter. Bake at 350 for 35 minutes.
* Serve warm or cold.
* Serve plain or topped with soy milk, soy ice cream or safe whipped cream.
