We loved baked oatmeal. I wanted to figure out a recipe that wouldn't use refined sugar. We like to top it with additional fresh fruit or reheat it with additional soy milk.
Apple Banana Baked Oatmeal
2 cups old fashioned oats
2 cups boiling water
2 small apples, diced with or without skin
1 banana, diced
1 cup flaked coconut, raisins, Craisins, currents, chocolate chips, etc. - optional
3/4 cup soy milk
1/4 cup maple syrup or honey
1 tbsp cinnamon
1/2 tsp vanilla extract
Combine the oats and water then cover for 10 minutes. Add the remaining ingredients then mix until thoroughly combined. Spread the mixture into a parchment paper lined 8x8 dish. Bake at 350 for 45-50 minutes or until golden brown and set.
* Once cooled cut into serving sized squares and then freeze or store in the fridge for up to 4 days.

My daughter, Jazlyn, is anaphylactic to egg, dairy, peanuts, and tree nuts. When she was first diagnosed, I found it very difficult to find recipes and foods that didn't taste like "allergy" food. Over the last 15 years I have had a lot of fun developing and changing recipes so that they are safe for her. I love to share my recipes so that other families can realize how yummy "allergy" foods can taste. You don't have to sacrifice taste or your favorite foods, you just have to rethink how to make them. I made a promise to Jazzy that I would do my very best to find a way for her to eat any food she wants to try. So far I have been able to keep that promise. Egg Free, Dairy Free, Nut Free Jell-O Oatmeal Cookies
These cookies have a beautiful color and a subtle flavor from the Blackberry Fusion Jell-O. The oat flour makes the cookies soft and cakey. Very yummy!
Jell-O Oatmeal Cookies
2/3 cup unsweetened applesauce
1/2 cup soy milk
1 tsp vanilla extract
1 tbsp baking powder
1/2 tsp salt
1 box (3 oz size) Jell-O, any flavor desired
1/4 cup sugar
1 1/2 cups oat flour (I blend quick oats into a flour then measure)
1 cup flour
Combine the applesauce, soy milk, and vanilla. Add the baking powder and salt then mix again. Add the Jell-O and sugar and mix again. Add the oat flour and flour then mix until thoroughly combined. Drop heaping spoonfuls of the dough 2" apart on parchment lined baking sheets. Bake at 350 for 9-11 minutes or until set and the bottoms are golden.
* Makes about 24 cookies.

Egg Free, Dairy Free, Nut Free Crock Pot Overnight Oatmeal
We loved waking up to this warm, cinnamon apple oatmeal. It was just as good cold the next morning.

Crock Pot Overnight Oatmeal
3 cups soy milk (you can use all water, but it may lose some of its creaminess)
3 cups water
3 cups water
3 cups quick oats
1/2 cup brown sugar
3 tbsp vanilla extract
1 tbsp cinnamon
2 apples, chopped, optional
Combine all of the ingredients in a sprayed crock pot. Cover then cook on keep warm for 8-9 hours.

Egg Free, Dairy Free, Nut Free No Bake Sunbutter Oatmeal Balls
We love our No Bake Sunbutter Cheerio Balls, but we wanted to try something with oats instead. These Sunbutter Oatmeal Balls are very simple to make and are a yummy, healthy treat. We prefer them refrigerated, but they are also very good eaten right away. You can omit the powdered sugar coating if you prefer. If desired, you can stir in some safe chocolate chips, raisins, craisins, flaked coconut, or anything that sounds good to you. We decided to make this batch plain.
No Bake Sunbutter Oatmeal Balls
1 cup instant oats
1/2 cup oat flour (I blended 1/2 cup instant oats in the blender)
1/2 cup corn syrup or honey
1/2 cup Sunbutter
1/4 - 1/2 cup safe chocolate chips, raisins, craisins, flaked coconut, etc. - optional
Confectioner's sugar for rolling - optional
Thoroughly combine all of the ingredients except for the confectioner's sugar. Roll the mixture into bite-sized balls. Coat with confectioner's sugar if desired. Serve immediately or refrigerate until ready to eat.

Egg Free, Dairy Free Crispy Oatmeal Coconut Lace Cookies
These Crispy Oatmeal Coconut Lace Cookies are nicely crisp on the outside with a slightly chewy inside. The coconut flavor shows through nicely in these simple cookies.
Crispy Oatmeal Coconut Cookies
1 cup quick cooking oats
1 cup flour
1 cup sugar
3/4 cup flaked coconut
1/8 tsp salt
1/2 cup dairy free margarine
1 tbsp corn syrup
1 tsp baking soda
2 tbsp boiling water
1 1/2 tbsp vanilla extract
Combine the oats, flour, sugar, coconut, and salt. Place the margarine and corn syrup in a microwave safe bowl then microwave until melted. In a separate bowl, stir the baking soda into the boiling water. Add the baking soda mixture and the vanilla to the margarine mixture then stir until combined. Add the combined mixture to the oat mixture then stir until thoroughly combined. Drop by spoonfuls onto parchment paper lined baking sheets. Bake at 300 for 12-14 minutes or until the cookies are completely golden with lightly browned edges. Cool slightly before removing from the baking sheet to cool completely. Store tightly covered.

Egg Free, Dairy Free, Nut Free Cinnamon Oatmeal Pancakes
I always keep a variety of breakfast and lunch choices in the freezer. I usually take a day to the freezer. I made our Family Favorite Pancakes and Waffles, Chocolate Pancakes and Waffles and FRENCH TOAST. However, I didn't have any bananas to make our Blender Banana Oat Pancakes but I wanted an oatmeal pancake. I decided to make a pancake with oats that didn't contain any flour or oil. Wow, these pancakes are so thick and hearty with a yummy cinnamon flavor. My girls like them dipped in applesauce instead of pancake syrup.
Cinnamon Oatmeal Pancakes
2 cups oats
2 cups oats – ground in the blender into a flour
1/4 cup sugar
1 tbsp baking powder
1 tbsp cinnamon
1/2 tsp salt
3 cups water
3 tbsp vanilla extract
Combine the oats, oat flour, sugar, baking powder, cinnamon and salt. Add the water and vanilla then mix until thoroughly combined. Drop about 1/2 cup of the batter onto a sprayed skillet or frying pan. Fry until the bottom is golden. When the pancakes are ready to be flipped, they will hold together perfectly. Fry until golden.
* Makes 14 big, thick pancakes.
* These pancakes freezes and reheats perfectly. Flash freeze on baking sheets then transfer into Ziploc bags. Reheat in the microwave.

Egg Free, Dairy Free, Nut Free Cocoa Instant Oatmeal
Jazlyn and I have been on an oatmeal kick lately for breakfast. One morning I was also craving chocolate so I decided to try to make my breakfast taste like our No Bake Chocolate Oat Clusters. Mission accomplished. This oatmeal is hearty and chocolately. If you would like your oatmeal sweeter, feel free to add a little more sugar. Our favorite way to serve this oatmeal is topped with a sliced banana.
Cocoa Instant Oatmeal
1/4 cup quick oats
1/4 cup water
1/4 cup soy milk or additional water
1 tbsp cocoa powder
1 tbsp sugar
1 tsp vanilla extract
Thoroughly combine all of the ingredients in a microwave safe bowl. Microwave for 2 minutes.
* If you double the ingredients, microwave for 3 minutes.
* Wonderful topped with chopped strawberries or bananas.

Egg Free, Dairy Free, Nut Free Applesauce Oatmeal Breakfast Cookies
These cookies are so simple, healthy and wonderful. I call them breakfast cookies because I make them big, freeze them then reheat them for a fast or on-the-go breakfast. We like to use a combination of raisins, craisins and flaked coconut.
Applesauce Oatmeal Breakfast Cookies
2 cup oats
2 cups flour
1 1/2 cups unsweetened or cinnamon applesauce
1/2 cup brown sugar
1/2 cup sugar
2 tsp baking powder
1 tsp salt
3/4 - 1 1/2 cups total of raisins, craisins, flaked coconut, dried blueberries, safe chocolate chips, etc.
Thoroughly combine all of the ingredients except for the raisins. Stir in the raisins. Drop by spoonfuls onto parchment lined baking sheets. Bake at 375 for 10-15 minutes or until the bottoms are lightly browned and the cookies are set.
* I like to make these cookies big, freeze them then use them as a fast or on-the-go breakfast.
* These cookies do not spread or change shape. If you want a prettier cookie, roll the dough before placing on the baking sheet.
