My daughter, Jazlyn, is anaphylactic to egg, dairy, peanuts, and tree nuts. When she was first diagnosed, I found it very difficult to find recipes and foods that didn't taste like "allergy" food. Over the last 15 years I have had a lot of fun developing and changing recipes so that they are safe for her. I love to share my recipes so that other families can realize how yummy "allergy" foods can taste. You don't have to sacrifice taste or your favorite foods, you just have to rethink how to make them. I made a promise to Jazzy that I would do my very best to find a way for her to eat any food she wants to try. So far I have been able to keep that promise. Egg Free, Dairy Free, Nut Free Apple Bars

I had some apples to use up so we decided to make Apple Bars out of them. YUM!


Apple Bars

2 cups flour
2 tsp baking powder
1 tsp cinnamon
1/2 tsp salt
3/4 cup brown sugar
1/2 cup sugar
1/2 cup dairy free margarine, melted
1/2 cup unsweetened applesauce
1 tbsp vanilla extract
2 cups chopped and peeled apples

Combine the flour, baking powder, cinnamon, and salt. In a separate bowl, combine the brown sugar, sugar, and margarine. Add the applesauce and vanilla then mix again. Add the flour mixture to the applesauce mixture then mix until thoroughly combined. Stir in the apples. Spread evenly into a sprayed 9x13 baking dish. Bake at 350 for 30-35 minutes or until a toothpick inserted into the center comes out clean and the middle springs back when touched. Cool in the pan before cutting.

Egg Free, Dairy Free, Nut Free No Bake Sunbutter Oat Cookies and Bars

My girls love No Bake Chocolate Oat Clusters. However my dad is not a chocolate fan so I decided to try and make them with Sunbutter instead of chocolate. They were very good and stayed soft. Jazlyn liked dipping her cookies in chocolate syrup or topping them with safe chocolate chips.




No Bake Sunbutter Oat Cookies and Bars

3-4 cups quick oats
1/3 cup Sunbutter
1 tbsp vanilla extract
3/4 cup brown sugar
1/2 cup soy milk
1/4 cup dairy free margarine

In a large bowl, combine the oats, Sunbutter and vanilla. Place the brown sugar, soy milk and margarine in a saucepan. Cook and stir over medium heat until the mixture comes to a boil. Boil, without stirring, for 1 minute. Pour the brown sugar mixture over the oat mixture then stir until thoroughly combined. Roll the mixture into balls, flatten them slightly then place them on wax paper until set.
* To make cookie bars, transfer the mixture into an 8x11 pan that has been lined with parchment paper. Press down firmly and evenly. Allow the mixture to cool before cutting into squares.
* If desired, you can stir some safe chocolate chips into the mixture.

Egg Free, Dairy Free, Nut Free Chocolate Sunbutter Graham Treats

This is one of the fastest and easiest treats I've ever made. They are very good and Jazlyn just couldn't get enough.


Chocolate Sunbutter Graham Treats

13-16 graham cracker squares
1 1/2 cups safe chocolate chips
1/2 cup Sunbutter

Line a 9x13 baking dish with foil, leaving a 2” overhang at the opposite ends. Arrange the graham crackers to fill the bottom of the baking dish. Microwave the chocolate and Sunbutter until melted and smooth. Pour the mixture over the grahams then spread to cover completely. Refrigerate for 1 hour or until firm. Use the foil handles to remove from the pan then peel off the foil. Break into pieces or cut into squares then store in a tightly covered container in the fridge.
*  You can vary the amount of Sunbutter and chocolate to suit your family's taste.

Egg Free, Dairy Free, Nut Free Banana Fudge Brownies

I had some bananas that were getting to ripe and wanted to try something different. Be warned that these brownies have a strong banana flavor. However, since my girls and I love bananas, this is a good thing. These brownies taste like a moist banana bread mixed with a fudgy brownie. These are the prettiest brownies that I have made since Jazlyn's allergies. They hold together very well and have a nice appearance.


Banana Fudge Brownies

1/2 cup dairy free margarine
2 cups safe chocolate chips
1 1/3 cups brown sugar
1 cup unsweetened applesauce
1 cup mashed ripe bananas
2 tsp vanilla extract
1/2 tsp salt
1 1/2 cups flour

Melt the margarine then stir in the chocolate chips until melted and smooth. In a separate bowl, combine the brown sugar, applesauce, bananas, vanilla and salt. Add the melted chocolate mixture then stir until thoroughly combined. Add the flour then stir just until incorporated. Spread the batter evenly into a sprayed 9x13 baking dish. Bake at 325 for 30-40 minutes or until the top is no longer glossy and a toothpick inserted into the center comes out with a few moist crumbs. Be careful not to over bake the brownies. Cool before cutting into bars or squares.
* These brownies will have a moist chewy texture, not a cakey texture.
* If you would like a milder banana flavor, reduce the mashed bananas to 1/2 cup.

Egg Free, Dairy Free, Nut Free Granola Candy Bars

I was attempting to make a no-bake granola bar. However, when my girls tasted the bars, they kept asking for more candy bars instead of granola bars. They make a great grab and go breakfast or snack. These granola bars pack wonderfully in Ziploc bags or foil.



Granola Candy Bars

1/2 cup brown sugar
1/2 cup Sunbutter
1/4 cup corn syrup
2 cups oats
1 1/2 cups Rice Krispies
1 1/2 tsp vanilla extract
1/2 cup safe chocolate chips
Place the brown sugar, Sunbutter and corn syrup in a microwave safe bowl. Microwave for 2 minutes or until the mixture comes to a boil, stirring every minute. Add the oats, Rice Krispies and vanilla then stir until thoroughly combined. Stir in the chocolate chips. Press the mixture firmly and evenly into a sprayed 8x8 baking dish. Cool before cutting. Store tightly covered.
*  These granola bars can be doubled and placed in a 9x13 baking dish.

Egg Free, Dairy Free, Nut Free Pineapple Snack Cake

I love pineapples and this snack cake is just perfect. I love simple recipes and I always have this cake in the pan and ready before my stove can preheat. This cake makes a great breakfast or anytime snack. I also like it warmed up and topped with some soy milk. I wrap individual portions of the cake in foil so the girls can just grab one when they want one. It also makes it a portable treat or breakfast.



Pineapple Snack Cake

2 cups flour
1/2 cup sugar
2 tsp baking soda
1/2 tsp salt
1 can (20 oz) crushed pineapple
2 tsp vanilla extract

Combine the flour, sugar, baking soda and salt. Add the undrained pineapple and vanilla and stir until well incorporated. Pour into a sprayed 9x13 baking pan. Bake at 350 for 30 minutes or until a toothpick inserted in the center comes out clean.

Egg Free, Dairy Free, Nut Free Chocolate Chip Cookie Cake

Everyone loved this snack. Even my husband, who doesn't eat a lot of sweets, had several pieces. This cake is a cross between a chocolate chip bar cookie and a vanilla cake.


Chocolate Chip Cookie Cake

1 cup unsweetened applesauce
2/3 cup oil
2 tsp vanilla extract
3 1/2 cups flour
2 cups sugar
3 tsp baking powder
1/2 tsp salt
2 cups safe chocolate chips

Combine the applesauce, oil and vanilla. In a separate bowl, combine the flour, sugar, baking powder and salt. Add the oil mixture to the flour mixture and mix until thoroughly combined. Stir in the chocolate chips. Spread the batter evenly into a sprayed 9x13 baking pan. Bake at 350 for 35-45 minutes or until a toothpick inserted in the center comes out clean and the top is lightly browned. Cool completely in the pan before cutting into squares.

Sunbutter Fudge

This Sunbutter fudge is creamy, delicious and very simple to make.


Sunbutter Fudge

3/4 cup dairy-free margarine
1 cup Sunbutter
2 cups confectioner's sugar

Melt the margarine in a medium saucepan over medium heat. Remove the pan from the heat and stir in the Sunbutter until smooth. Stir in the confectioners' sugar, 1/2 cup at a time, until well blended. Spread the mixture evenly into a sprayed 8x11 baking dish. Place in the fridge until firm before cutting into squares. Store in the fridge.
*  If you would like a slightly harder fudge, increase the confectioner's sugar to 2 1/2 cups.

Sunbutter Rice Krispie Treats

These treats have a wonderful Sunbutter flavor and they are not gooey like the marshmallow type of treat. We especially like these treats with safe chocolate chips added.


Sunbutter Rice Krispie Treats

1/2 cup honey
1/2 cup sunflower seed butter (I use Sunbutter)
5-6 cups cripy rice cereal (I use Rice Krispies)
1 cup safe chocolate chips, dried fruits, etc., optional

Place the honey and sunflower seed butter in a large pot then heat over medium-low heat until melted, stirring constantly. Remove the pot from the heat and stir in the crispy rice cereal and the chocolate chips until thoroughly coated. Press the mixture firmly into a sprayed 9x13 baking dish. Place in the fridge to chill for 30 minutes before cutting into squares. Store in the fridge.

Egg Free, Dairy Free, Nut Free Baked Oatmeal

I love oats and this is one of my favorite breakfasts. I just place a square in a microwavable dish, top with a little sugar and soy milk then microwave until warmed through. This also makes a great on the go snack or breakfast because you can eat the squares as is at room temperature. My parents and kids prefer to add some fruits, chocolate chips, etc. However, I like them plain or using a flavored applesauce.


Baked Oatmeal

4 cups quick cooking oats
1/2 cup brown sugar
3 tsp baking powder
2 tsp cinnamon
1/4 cup wheat germ, optional
2/3 cup applesauce, unsweetened or any flavor desired
2 tsp vanilla extract
1 1/2 cup soy milk

Combine the oats, brown sugar, baking powder, cinnamon and wheat germ. Add the applesauce, vanilla and soy milk then mix thoroughly. Pour the batter in a sprayed 9x13 baking dish. Bake at 350 for 30-35 minutes or until set.
*  You can add anything you like to this recipes such as blueberries, strawberries, canned peaches or pears, safe chocolate chips, coconut, raisins, shredded apple, etc.
*  Serve as is or topped with some soy milk.
*  Serve warm or at room temperature.

Egg Free, Dairy Free, Nut Free Cereal Treats

This is one of our favorite fast, versatile treats. I understand this isn't a new concept, but the more you experiment beyond the traditional recipe, the more yummy they are.

The top picture is S'mores Bars. I used Cinnamon Toast Crunch Cereal and safe chocolate chips. I added 1/4 cup of the chocolate chips with the marshmallows then another 1/2 cup of the chocolate chips with the cereal.

The bottom picture is Cocoa Pebbles cereal topped with sprinkles.



Cereal Treats

6 cups safe cereal (we like Rice Krispies, Multi-Grain Cheerios, Fruit Loops, Pebbles, Cocoa Puffs, etc.)
3 tbsp dairy-free margarine
10 1/2 oz bag mini marshmallows

Melt the margarine in a large saucepan over medium-low heat. Add the marshmallows then cook, stirring constantly, until completely melted. Remove the pan from the heat then stir in the cereal until well coated. Using wax paper, press the mixture evenly and firmly into a sprayed 9x13 baking pan. Cut into squares when cool.
*  1/2 cup Sunbutter can be melted with the marshmallows if desired. This is especially good with the Cheerios and Cocoa Puffs.
*  1/2-1 cup of safe chocolate chips can either be melted in with the marshmallows or stirred in with the cereal or 1/2 each way. This is especially good with the Rice Krispies.
