Egg Free, Dairy Free, Nut Free Family Favorite Bread Pudding

We love bread puddings and so far we've made Crock Pot Pumpkin Bread PuddingCoconut Chocolate Chip Bread Pudding and Very Berry Bread Pudding. This bread pudding is absolutely wonderful. The girls love it so much that we've been making it almost every week. It's so easy to make that the girls prepare the bread pudding then I bake it for them.



Family Favorite Bread Pudding

4 cups torn bread cubes
3 cups soy milk
3/4 cup sugar
1/2 cup dried cranberries or substitute raisins, flaked coconut, safe chocolate chips, etc.
2 tbsp vanilla extract
1-2 tsp cinnamon

Place the bread in a sprayed 8x11 baking dish. In a separate bowl, thoroughly combine the remaining ingredients. Pour the mixture over the bread then stir until all of the bread is moistened. Spread the mixture evenly in the dish. Bake at 350 for 25-35 minutes or until set. Serve warm or cold.

  3. I just wanted to tell you that I just baked this recipe with some minor changes because of my diet, and it is heavenly! So easy! I halved the recipe for just myself, used unsweetened almond milk (I am leery of soy, because it may have caused estrogen related cancer)and substituted organic brown sugar with a couple of tablespoons of honey for the sugar. I fell in love with a similar bread pudding at a local restaurant, but I'm sure they use cream and hidden fats. This is so yummy... it will be a staple for quick go to comfort food dessert. Thank you for sharing! I also sprinkled a few walnuts on top, but of course for those allergic, they can eliminate that. - Pam, Apples of Gold
